The University of Michigan Dining Services, specifically M|Dining at Mary Markley Hall, is a renowned provider of quality culinary experiences on the Ann Arbor campus. The Chef Assistant role at M|Dining is an integral position within the culinary operations, essential for upholding high-quality food production and preparation standards. This role requires an individual who can accurately read and adhere to standardized recipes in both back-of-house and front-of-house settings, ensuring all meal components meet established nutritional and presentation criteria. The Chef Assistant will support the Chef and management team by assisting with quality control, production standards, and training, helping to maintain consistency and efficiency in kitchen operations. Beyond routine food preparation, the role includes organizational tasks such as managing daily prep lists, coordinating multiple food orders, and supervising staff to ensure productivity and compliance with safety and sanitation requirements.

Additionally, the Chef Assistant will play a key role in communication among culinary and management staff to address product, equipment, and staffing needs, report critical issues, and assist in menu development and implementation. Job Duties

  • Accurately read and adhere to standardized recipes for all meals
  • Prepare food items providing consistent food quality and maintain accurate nutritional standards
  • Assist the Chef/Manager in the implementation, follow-through and verification of quality, production and presentation standards
  • Use organizational skills to prioritize tasks, including preparation of multiple food orders
  • Coordinate, assign and inspect the work of staff to ensure timely production and standards are met
  • Communicate daily with culinary and management staff regarding food products, supplies, equipment and staffing needs
  • Maintain cleanliness and proper sanitation in preparation, storage, and service areas
  • Operate service equipment safely and report mechanical issues
  • Assist in menu and recipe development including portioning and service standards
  • Communicate with guests regarding food ingredients and allergens
  • Ensure compliance with Health Code Regulations and proper food handling
  • Participate in training programs and assist in the training and development of employees
  • Examine food and supplies to assure quality, freshness and appearance
  • Assist in product ordering and receiving
  • Work sustainably to reduce waste and monitor efficient use of resources
