This opening is for the role of an experienced Chef, a critical position responsible for upholding the culinary standards and operational efficiency of Pacific Catch’s kitchen. Reporting directly to the General Manager, the Chef plays an instrumental role in overseeing daily culinary operations and ensuring that every dish prepared meets the brand’s high standards for quality, freshness, and presentation. This full-time, hourly position requires a dedication of 40 hours per week, with an additional 7.5 hours of scheduled overtime on average, reflecting the dynamic and fast-paced nature of the restaurant industry. The hourly pay rate for this position ranges from $26.00 to $39.00, inclusive of expected overtime compensation.
The ideal Chef will lead by example, fostering a positive and professional kitchen culture that not only maintains operational excellence but also cultivates team spirit and growth among the back-of-house (BOH) and front-of-house (FOH) team members. Responsibilities include conducting rigorous line checks to guarantee ingredient freshness, executing and maintaining seasonal prep and dish recipes, and ensuring plate presentations that excite and delight guests. Collaboration with the General Manager and management team is essential to create memorable experiences for both guests and team members alike.
Furthermore, the Chef will be instrumental in training, coaching, and inspiring the team, facilitating cross-training opportunities between BOH and FOH members to enhance operational flexibility. Managing kitchen equipment, monitoring food inventory, controlling waste, and scheduling labor costs are additional critical duties. Job Requirements
- Must be able to stand and exert well-paced mobility for periods of up to 5 hours in length
- Must be able to reach, bend, stoop and frequently lift up to 25 pounds
Job Qualifications
- Degree in culinary arts and/or restaurant management preferred
- Five years BOH leadership and management experience in a high volume, full-service restaurant
- Lead by example, be team focused and able to motivate your team
- Computer skills in Excel, Toast POS, Open Table, Google Mail, and calendars
- Must possess exemplary knife skills and the ability to coach/train others
- Ensure plate presentation meets the standards and excites our guests
- Demonstrated success in managing people and strong leadership skill
- English proficient, bi-lingual a plus
Job Duties
- Oversee and supervise day-to-day culinary operations
- Line checks, ensuring freshness and quality of ingredients
- Maintain proper kitchen culture and a professional environment
- Execute and maintain seasonal prep and dish recipes
- Work with General Manager and management team to create a memorable experience for guests and team members
- Educate, train, coach, and inspire growth for all team members
- Cross train BOH and FOH team members
- Supervise the coordination and maintenance of kitchen equipment
- Monitor and manage ordering, inventory, and control food waste
- Manage scheduling and labor costs for BOH
- Supervise and ensure proper onboarding of new BOH team members
- Supervise and coordinate food and kitchenware needs
- Participate in Pacific Catch outreach and community involvement programs
- Completion of daily, weekly, and monthly operational, administrative, and HR-related duties
- Review and understand P&L statements, always looking for opportunities to improve sales or manage costs
