Job Description

The hiring establishment is a government-operated correctional facility kitchen responsible for preparing and serving meals to inmates and staff. This operation is overseen by an Executive Chef and a Kitchen Supervisor, ensuring that all food services meet strict safety, nutritional, and quality standards. The kitchen plays a critical role in maintaining the health and well-being of the inmates and staff by providing nutritionally balanced meals and adhering to applicable health codes and departmental policies. The environment is highly regulated due to the nature of the population served and the security protocols in place, requiring all kitchen staff to maintain a high standard of personal hygiene and comply with all security procedures.

This role is a Cook position within the correctional facility's kitchen staff. It involves hands-on food preparation, menu planning assistance, and supervision of inmate workers in the kitchen. The Cook works directly under the Executive Chef and Kitchen Supervisor and is responsible for ensuring the timely preparation and service of meals, including special diets for inmates with specific nutritional requirements. The role demands a versatile culinary professional capable of managing large-scale food production while maintaining compliance with health regulations and departmental policies.

Additionally, the Cook is tasked with inventory management, ordering of kitchen supplies and equipment, and ensuring the cleanliness and hygiene of all kitchen, food storage, and dining areas. This position requires willingness to work with and train inmate workers, fostering a collaborative environment within the kitchen under secure conditions. Flexibility to adapt to new duties as assigned, and availability for various shifts including mandatory overtime, are essential aspects of the role. Physical demands include standing or sitting for extended periods, lifting and carrying up to 40 pounds occasionally, and walking short distances.—The correctional facility seeks a dedicated Cook who can effectively supervise inmate workers, assist with menu and diet planning, and uphold the highest standards for food preparation and sanitation. The successful candidate will have culinary training or relevant experience and exhibit strong communication skills, particularly in directing and instructing inmate workers. This role not only supports the facility’s operational goals but also contributes to inmate rehabilitation efforts by training them in food preparation skills.

Job Qualifications

  • one or more years experience as a cook or chef preparing food for large numbers of people
  • a degree or certificate from a culinary arts institution
  • a registered dietician's degree
  • willingness to work with and train inmates in food preparation
  • flexibility and ability to learn and perform new duties and skills as assigned

Job Duties

  • assist in the planning of menus and special diets
  • prepare and/or supervise the preparation of meals and special diets
  • assist the Kitchen Supervisor and Executive Chef in ordering food and equipment for the kitchen and dining areas
  • ensure the timely and orderly service of meals and proper nutritional diets
  • ensure that the kitchen, food storage, and dining areas are maintained in compliance with applicable health codes, regulations, and Department policies
  • account for all kitchen stores, equipment, and utensils
  • maintain cleanliness of all kitchen, storage, and dining areas, equipment, and utensils
  • perform other related duties as assigned by the Sheriff
