This opportunity is for the role of Culinary Chef, a position that merges culinary creativity with scientific rigor. The Culinary Chef at NotCo works closely with cross-functional teams spanning culinary arts, research and development, and product science to transform imaginative concepts into technically feasible and scalable food products. This position requires a deep understanding of ingredient functionality, advanced pastry techniques, and a passion for experimentation to push the boundaries of flavor, texture, and food technology.
The Culinary Chef will play a pivotal role in the company’s product innovation journey by executing advanced culinary research and development projects. From ideation through to final formulation, this role demands designing culinary systems that perform consistently across multiple variables including textures, flavors, and product formats. Job Requirements
- Degree or certification in Culinary Arts, Pastry or related field
- At least 3 years of experience in Culinary R&D, pastry or confectionery development
- Strong knowledge of ingredient functionality such as proteins, fats, sugars, emulsifiers, stabilizers
- Experience in iterative formulation, sensory testing, and scaling pastry concepts
- Passion for culinary experimentation and technology
- Proactive, organized, and ownership mindset
- Ability to work collaboratively in cross-functional teams
- Ability to travel up to 50% including international and extended trips
- Authorization to work legally in the U.S.
Job Qualifications
- Degree or certification in Culinary Arts, Pastry or related field
- 3+ years of experience in Culinary R&D, pastry or confectionery development, ideally within R&D, product innovation, or high-end operations
- Strong knowledge of ingredient functionality including proteins, fats, sugars, emulsifiers, stabilizers
- Demonstrated experience in iterative formulation, sensory testing, and scaling pastry concepts
- Passion for experimentation, curiosity for technology, and a desire to push boundaries in flavor and texture
- Ownership mindset, proactive, organized, and comfortable operating in a dynamic, evolving environment
- Ability to work well in teams and cross-functional groups in a matrixed environment both regionally and globally
- Authorization to work in the U.S. required
Job Duties
- Execute advanced culinary R&D by translating ingredient functionality, process control, and sensory understanding into scalable products
- Convert creative direction and R&D insights into clear, validated formulations ready for testing and iteration
- Define process parameters ensuring every concept can be replicated with technical accuracy and culinary integrity
- Apply rigorous testing and sensory evaluation to optimize flavor, texture, and structure balancing technical precision with creative problem-solving
- Collaborate closely with food scientists, developers, and culinary peers to connect creative thinking with scientific execution and build alignment
- Continuously research and experiment with emerging ingredients, techniques, and technologies to reimagine pastry and confectionery development
- Establish repeatable methodologies, document process learnings, and contribute to internal formulation libraries to build a culture of knowledge-sharing
