The role available is a leadership position within the kitchen operations, responsible for managing and overseeing the work of line cooks, prep cooks, artisan bread makers, cake decorators, pastry specialists, and bakery partners. This position involves coordinating the production of various food items for different store departments including the Chef's Case, Soup/Salad/Sandwich Bar, Catering, Bakery, Tortilleria, Bread Production, and Pastry areas. The individual in this role will support scheduling to ensure adequate staffing levels are maintained while adhering to budgetary constraints. A key responsibility is maintaining cleanliness and sanitation across all kitchen, walk-in storage, and preparation areas to comply with health and safety standards.
As a Sous Chef, this role requires significant independent judgment in making employment and business decisions, often involving product strategy, personnel management including hiring, promoting, disciplining, and resolving partner-related issues. The Sous Chef also assumes full responsibility for kitchen production in the absence of the Executive Chef or Executive Sous Chef. Additionally, this position plays a crucial part in new product development and menu costing activities, contributing to the innovation and financial success of the food offerings. The work schedule is flexible, as it demands availability for opening, closing, and weekend shifts to meet operational needs. This leadership role requires a combination of culinary expertise, strong organizational skills, and the ability to lead, train, and cross-train kitchen staff effectively in a high-volume environment. The position is pivotal in ensuring a smooth, efficient, and high-quality food production process at Central Market.

Job Requirements
- Professional culinary degree or equivalent combination of culinary training and/or experience
- Ability to execute high volume production
- Experience in ordering
- Experience in inventory maintenance
- Experience in shrink control
- Proficiency with automated reporting systems including inventory
- Proficiency with automated reporting systems for food cost
- Proficiency with scheduling software
- Proficiency with time and attendance and labor management preferred
- Ability to supervise staff

Job Qualifications
- Professional culinary degree or equivalent combination of culinary training and experience

- Proficiency with automated reporting systems including inventory, food cost, scheduling, time and attendance, and labor management
- Ability to supervise, train, and cross-train kitchen staff

- Ability to maintain efficient operations and troubleshoot equipment malfunctions
- Maintain sanitation standards throughout work areas
Job Duties
- Oversee daily job responsibilities of line cooks and prep cooks as well as artisan bread makers, cake decorators, pastry specialists, and bakery partners
- Produce necessary products for Chef's Case, Soup/Salad/Sandwich Bar, Catering, Bakery, Tortilleria, Bread Production, and Pastry areas
- Assist in scheduling partners to meet production goals within budget guidelines
- Maintain a clean and sanitary work environment throughout kitchen, walk-ins, and storage areas
- Use independent judgment in employment-related and business decisions, including hiring, promoting, disciplining, and resolving partner matters
- Manage total kitchen production in the absence of the Executive Chef or Executive Sous Chef
- Assist in new product development and menu costing
