Job Requirements

  • Proven experience in bakery production
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to achieve proficiency
  • Experience in planning production and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Knowledge in pastry basics including buttercream, icings, cooked creams and curds, pate a choux, sponge, and cheesecakes
  • Experience with rack ovens, kettles, and mixers between 80 to 140 quarts
  • Knowledge of European style baking and complex preferment methods
  • Experience working with deck ovens, bread divider, and bread divider rounder
  • Ability to work flexible shifts
  • Ability to lift up to 50 lbs safely
  • Ability to manage heavier lifts by breaking down loads or asking for assistance
  • Ability to work in fast-paced retail environment
  • Ability to maintain customer focus and attentiveness
  • Able to perform physical activities such as reaching, bending, stooping, crouching, kneeling, climbing stairs, twisting, pushing, pulling, pinching, and using fine motor skills
  • Occasionally exposed to hot, cold, loud, and wet conditions

Job Qualifications

  • Proven experience in bakery production
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to proficiency
  • Knowledge of bakery production planning and sanitation standards
  • Ability to troubleshoot recipe and product issues
  • Knowledge of pastry basics including buttercream, icings, cooked creams and curds, pate a choux, sponge, and cheesecakes
  • Experience with rack ovens, kettles, and large mixers
  • Knowledge of European style baking for bakery and bread using complex preferment methods such as levain and sponge/poolish
  • Experience with deck ovens, bread dividers, and bread rounders
  • Preferred graduation from baking or pastry school
  • Preferred tortilla production experience
  • Experience in leading and developing teams

Job Duties

  • Manage employment-related and business decisions including hiring, promoting, disciplining, suspending, discharging, and rewarding partners
  • Conduct interviews, performance reviews, partner feedback, training, and schedule writing
  • Provide superior customer service and lead a team to deliver exceptional service
  • Ensure production schedules and quantities meet forecast
  • Maintain product quality, presentation, and stock levels
  • Maintain extensive product knowledge
  • Assist Bakery Manager with daily duties and weekly forecasting and production planning
  • Effectively manage product waste
  • Monitor product assortment, shrink, labor, and wrap expenses to meet budget goals
  • Support product ordering and inventory control
  • Plan to meet weekly and long-term budget goals with Bakery Manager
  • Sell products for promotional and special events
  • Merchandize department for maximum sales including signage and art display
  • Maintain vendor relationships
  • Ensure compliance with all government and company food safety and sanitation regulations
  • Organize and rotate coolers
  • Work with Food Safety leader for regular assessments and requirements compliance
