The role of Catering Sales Manager at the Wilmington Convention Center is vital for driving catering business and ensuring an exceptional event experience through expert food and beverage sales management. This full-time, exempt, salaried position reports directly to the Director of Sales and involves actively soliciting catering opportunities for booked events. The Catering Sales Manager is responsible for developing tailored food and beverage proposals, updating and improving the catering menu, preparing detailed Banquet Event Orders (BEOs), and ensuring clear and precise communication of client requirements to the Food & Beverage team and other internal departments. The position demands a blend of sales acumen, strong organizational capabilities, and teamwork to support successful event execution with a customer-focused approach.

This role requires engaging prospective and repeat clients through site tours, presentations, and planning meetings while managing catering proposals, pricing, and client correspondence efficiently. It involves maintaining an up-to-date catering menu that reflects current trends, pricing, and operational needs while fostering innovative food and beverage options to enhance the guest experience. Coordination of tastings and close collaboration across departments to align event details with overall business objectives are also critical duties. The Catering Sales Manager plays an active part in internal meetings, documentation accuracy, and collaborative industry networking, including partnerships with local hotels and community organizations. The ability to adhere rigorously to pricing guidelines, booking policies, and standard operating procedures while delivering professional, accurate, and high-quality service is essential for success in this position. Occasional flexibility in working hours, including evenings, weekends, and holidays, is required to meet event demands. A professional appearance and a valid driver’s license are also necessary due to travel responsibilities. This position may require acting as Manager on Duty during events, highlighting a leadership element despite no direct supervisory responsibilities. Job Qualifications

Job Duties

  • Actively solicit food and beverage business for booked events and work with clients across assigned markets to identify food and beverage needs, menu selections, service preferences, and event-specific requirements
  • conduct site tours, walkthroughs, presentations, and planning meetings
  • engage prospective and repeat clients both onsite and offsite
  • prepare client correspondence, catering proposals, menu estimates, and related pricing information
  • prepare Banquet Event Orders to communicate client requirements, event timelines, guarantees, setup details, and menu information and related event documents for assigned food and beverage functions clearly to the Food & Beverage department and other internal teams
  • obtain client approvals and distribute final details to internal departments in a timely manner
  • update and maintain the catering menu to reflect current offerings, pricing, trends, and operational needs
  • monitor industry trends and competitor activity to maintain a competitive edge
  • recommend and develop creative food and beverage options that enhance the guest experience and support sales efforts
  • coordinate and conduct tastings as needed for clients and key food and beverage events
  • consult and collaborate with internal departments as needed to align event details, optimize the guest experience, and achieve overall business objectives
  • participate in weekly internal meetings to communicate updates and support coordination across departments
  • maintain accurate and up-to-date account and event records within the online booking system, ensuring proper documentation is recorded and information is current
  • track catering activity and revenue data to support forecasting, budget development, and ongoing budget monitoring
  • foster collaborative relationships with the CVB, hotels, clients, and industry/community partners and attend select networking/industry events as assigned
  • abide by approved pricing guidelines, booking policies, and standard operating procedures
  • ensure accuracy, professionalism, and highest level of customer service in all communications, interactions and work product
  • participate in team events and activities
  • other duties assigned by the Director of Sales
