The Catering Manager role at Acqualina Resort plays a pivotal part in maintaining the resort's reputation for exquisite event management and guest satisfaction. This position is responsible for overseeing all aspects of the Catering Department, ensuring that the department adheres to hotel standards for quality and service, while also managing budgets effectively. The Catering Manager works closely with clients to coordinate event details and menus, fostering repeat business through exceptional service, accurate event execution, and strategic solicitation. Reporting directly to the Director of Sales and Marketing, the Catering Manager commands a leadership role with responsibilities that include managing a team, maintaining cleanliness and organization within catering spaces, resolving guest complaints, and ensuring timely communication across departments.

The work environment is diverse and dynamic, encompassing catering offices, banquet function spaces, kitchens, and stewarding areas. Job Requirements

  • High school diploma or equivalent
  • Minimum 2 years experience as a Catering Manager
  • Fluency in English and Spanish
  • Knowledge of food service styles and menu development
  • Ability to perform basic arithmetic
  • Familiarity with food and beverage cost controls and sales and marketing tools
  • Ability to communicate clearly and provide legible communication
  • Ability to work with minimal supervision
  • Ability to prioritize, organize and resolve problems using good judgment
  • Physical ability to exert effort up to 20 pounds and remain in stationary position for extended periods
  • Confidentiality in handling guest information
  • Familiarity with property management and point of sales systems

Job Qualifications

  • High school graduate or equivalent vocational training certificate
  • Some college education preferred
  • Minimum 2 years experience as a Catering Manager
  • Knowledge of various food service styles including French, Russian, flambé, and Butler style
  • Knowledge of menu development
  • Fluency in English and Spanish both verbal and non-verbal
  • Ability to provide legible communication
  • Basic arithmetic skills
  • Familiarity with food and beverage cost controls
  • Familiarity with sales and marketing tools
  • Ability to suggestively sell
  • Ability to use property management, computer, and point of sales systems
  • Previous guest relations training
  • Creative talent
  • Certification in liquor, wine, and food service is desirable
  • Culinary training is desirable
  • Alcohol awareness certification desirable

Job Duties

  • Manage all aspects of the Catering Department in accordance with hotel standards
  • Coordinate details and menus for clients' functions
  • Maintain budgeted revenues through solicitation of business while controlling expenditures
  • Direct, implement and maintain a management philosophy to guide staff
  • Maintain compliance with departmental policies, service procedures, and standards as noted in Catering SOP
  • Organize and conduct pre-consultations with clients and internal teams
  • Monitor cleanliness, sanitation, and organization of work areas
  • Resolve guest complaints ensuring satisfaction
  • Oversee preparation and distribution of banquet event orders
  • Direct performance of catering support team and provide necessary training
  • Monitor banquet sales and resolve discrepancies
  • Prepare and distribute catering forecasts and reports
  • Establish and maintain relationships with vendors, suppliers, and clients
  • Manage billing and payment processes according to accounting standards
  • Conduct weekly and monthly meetings and reviews
  • Promote a cooperative working climate to maximize employee morale and productivity
  • Utilize social media and PR activities to promote the catering services
