This full-time role based in Providence, Rhode Island, is critical to the success of campus dining operations, specifically focusing on the daily back-of-house (BOH) management for catering events. The position involves overseeing and participating in the preparation and execution of all catering events on campus, ensuring that food production and kitchen operations meet the highest standards of quality, safety, and efficiency. The catering kitchen supervisor will manage various tasks from setting up kitchens for events to breakdown post-event, ensuring that every detail aligns with university policies and health regulations.
The professional in this role will lead the culinary preparation process by adhering to standardized recipes and cooking procedures, handling inventory for food stations, and maintaining proper food safety logs. Job Duties
- Supervises and assists with setting up the kitchen at events
- producing catering food and breaking down the kitchen for events
- follows standardized recipes and procedures to cook food
- sets up and stocks food stations and garnishes food for display
- utilizes appropriate cleaning procedures to maintain and store products according to policies and health codes
- maintains food safety and operational logs
- adjusts recipes and food preparation according to guest requests
- prepares inventory lists for food stations
- works closely with assistant cooks on food preparation, cooking, and storing according to specifications
- operates assigned kitchen equipment including cleaning and sanitizing
- assists cooks as needed
- manages and aids in the full execution of all events including setup and breakdown
- loads and unloads catering vehicles for campus events
