This esteemed establishment boasts a highly respected scratch-made bakery program that delights guests daily with artisanal croissants, breads, pastries, and desserts crafted meticulously from scratch. We are currently seeking a skilled Pastry Sous Chef to join our team and take a pivotal role in leading one of Richmond’s most recognized pastry programs. This is a full-time position, offering competitive pay ranging from $22 to $25 per hour based on experience, along with a comprehensive benefits package and opportunities for growth within the HOUSEpitality Family. As the Pastry Sous Chef, you will be instrumental in maintaining and elevating the high standards that have made Can Can Brasserie a respected institution. You will work closely with the pastry team to produce artisan breads, flaky croissants, delicate pastries, and exquisite desserts, managing production from start to finish in our true scratch bakery and pastry operation. This role calls for someone who takes pride in the craft of baking and pastry and enjoys mentoring and supporting their colleagues to achieve excellence.
In this position, you will not only contribute to daily production but also assist in managing pastry operations including scheduling, quality control, inventory management, and continuing innovation of seasonal menus and dessert offerings. Your leadership will be vital in ensuring consistency, attention to detail, and adherence to food safety and sanitation standards. Job Requirements
- Minimum four years of pastry or bakery experience
- Experience producing artisan breads, croissants, pastries, and desserts
- Strong understanding of baking fundamentals and pastry techniques
- Leadership experience preferred
- Passion for quality and attention to detail
- Ability to work early mornings, weekends, and holidays as needed
- Strong organizational and communication skills
- Able to lift 50 lbs and stand for extended periods
Job Qualifications
- Minimum four years of professional pastry or bakery experience
- Experience producing artisan breads, croissants, laminated doughs, pastries, and plated or retail desserts
- Strong understanding of baking science, fermentation, proofing, and pastry production techniques
- Experience maintaining production schedules and meeting daily volume requirements
- Ability to consistently execute recipes with precision and attention to detail
- Experience training, coaching, and supporting pastry team members preferred
- Knowledge of food safety, sanitation, and kitchen organization best practices
- Strong time management and multitasking skills
- Positive attitude and ability to lead by example in a fast-paced environment
- Commitment to quality, consistency, and continuous improvement
- Strong communication skills and ability to work collaboratively with culinary leadership and team members
Job Duties
- Assist in leading daily pastry and bakery operations
- Produce artisan breads, croissants, pastries, desserts, and specialty items
- Ensure recipes and production standards are consistently executed
- Train and support pastry cooks and bakery team members
