The role of Butcher Assistant at Caesars Entertainment is integral to maintaining high standards of food preparation and customer service within their hospitality operations. This position supports the Lead Butcher in the fabrication of meats, fish, and poultry, ensuring all items meet the hotel's strict quality and safety specifications. The Butcher Assistant is responsible for cutting, trimming, boning, tying, and grinding meat products using both manual cutlery and powered equipment such as electric grinders and band saws. This role may also involve estimating meat requirements, ordering supplies, receiving deliveries, inspecting products for quality, and maintaining accurate inventory records. Job Duties
- Assist lead butcher in proper fabrication of all meats fish and poultry to hotel specifications
- cut trim bone tie and grind meats using butcher's cutlery and powered equipment
- estimate requirements and requisition or order meat supply
- receive inspect and store all products upon delivery
- record quantity of meat received and issued to cooks
- clean fowl and fish
- follow sanitation safety procedures and daily sanitation guidelines
- utilize proper hand washing techniques
- maintain clean and presentable uniform
- utilize sanitizer at workstation and document wash rinse sanitize
- maintain temperature logs for cook to and hold time including hot and cold items
- work as a team member
- communicate with coworkers and supervisors
- follow plate presentation specifications and recipe specifications
- adhere to portion control and food quality guidelines
- identify all food products in butcher shop
