The Busser position at Canopy by Hilton Deer Valley plays an essential role in maintaining the smooth operation of both restaurant outlets and banquet events. Grounded in a strong Culture of Care, this role focuses on delivering outstanding service support by ensuring that dining areas remain impeccably clean and fully prepared for each guest seating. The Busser is responsible for clearing and resetting tables quickly and efficiently, adhering strictly to the property’s standard operating procedures (SOPs) to maintain high standards of cleanliness and guest satisfaction.

Employees in this role work closely with servers, hosts, bartenders, and back-of-house staff to ensure seamless operations, timely table turnover, and an inviting atmosphere. The role requires excellent communication skills and the ability to multitask in a fast-paced environment, particularly during large banquet events or peak dining hours. This position is distinct from other food and beverage roles such as servers, hosts/hostesses, bartenders, or utility staff, focusing solely on service support and floor execution.

Job Requirements

  • Must meet minimum age requirements as dictated by local law to handle and clear containers holding alcoholic beverages
  • Must possess or successfully obtain a valid Utah DABS Alcohol Server Certification (S.I.T. or equivalent approved state training) within 30 days of hiring
  • Valid local Food Handler's Permit must be obtained within 30 days of employment
  • Prior food and beverage experience in a hotel, upscale restaurant, or high-volume banquet operation is preferred but not required
  • Flexible scheduling availability required, including early mornings, late evenings, weekends, and holidays based on group bookings and historical property occupancy
  • Ability to lift, carry, and balance professional food and beverage service trays up to 30 lbs
  • Ability to lift, push, pull, or move banquet tables, chairs, and rolling equipment carts weighing up to 50 lbs with assistance

Job Duties

  • Assist servers actively by monitoring dining areas for empty plates, used silverware, and completed courses to execute continuous, unobtrusive pre-clearing
  • Clear remaining tabletop items immediately upon guest departure, safely transporting dirty dishes, glassware, and flatware to the dishwashing area
  • Sanitize table surfaces thoroughly according to health protocols and quickly reset stations to brand standards for the next seating
  • Keep service stations fully stocked with polished silverware, clean glassware, fresh linens, ice, and necessary condiments throughout the shift
  • Promptly clean up unexpected spills or broken items on the floor to maintain a safe, spotless environment for guests and colleagues
  • Communicate efficiently with the service and host teams regarding table turnover status to minimize guest wait times
  • Review operational directions to assist in the physical setup and teardown of event rooms, positioning tables, chairs, linens, and buffets efficiently
