The Cook role at Buca di Beppo plays a critical part in the restaurant's success. The primary responsibility of the Cook is to prepare all menu items to exact specifications and to maintain a clean, organized, and safe line area. This position requires consistent preparation of high-quality food in a timely manner, following company recipes and specifications closely. The Cook will handle tasks such as turning or stirring foods to ensure even cooking, seasoning and cooking food according to recipes or experience, tasting to test for sufficient cooking, and weighing and mixing ingredients with precision. Additionally, the Cook must maintain cleanliness and sanitation of their workstation and the kitchen as a whole, inspect food preparation areas for safe and sanitary practices, and comply with portion sizes and quality standards.

The role also involves estimating expected food consumption, requisitioning or purchasing supplies, setting up the line according to kitchen guidelines, pre-cutting ingredients to reduce preparation time, checking kitchen equipment functionality, stocking stations to par levels, and ensuring that all tools and equipment are in place. Food handling procedures such as wrapping, dating, refrigerating food, sanitizing cutting boards, organizing shelves, and hand-cleaning knives are essential duties. Participation in line checks to guarantee quality, assisting with cleaning and organizing all kitchen and storage areas, frequent handwashing, safe use of kitchen utensils and equipment, and teamwork with positive communication are also fundamental expectations. The Cook must follow all safety and sanitation policies to help maintain a safe working environment.

Job Duties

  • Consistently prepare high-quality food in a timely manner and follow all company recipes and specifications
  • Maintain the cleanliness and sanitation of your work station and the kitchen
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices
  • Comply with all portion sizes, quality standards, kitchen rules, policies, and procedures
  • Estimate expected food consumption, requisition or purchase supplies, or procure food from storage
  • Set up line according to kitchen guidelines and par sheets
  • Pre-cut ingredients such as fruits, vegetables, deli-meats to reduce preparation time
  • Check to see if kitchen equipment is operational
  • Stock stations to par levels
  • Check stations for equipment and tools
  • Memorize all ingredients and portion sizes for the menu items
  • Wrap, date and refrigerate food
  • Sanitize cutting boards
  • Organize station shelves
  • Hand-clean knives
  • Complete and participate in line checks to ensure that quality products are served
  • Assist with the cleaning, sanitation, and organization of kitchen, walk-ins, and all storage areas
  • Wash your hands frequently
  • Use kitchen utensils, knives, and equipment safely and responsibly
  • Work as a team and use positive communication skills at every opportunity
  • Clean, stock, and maintain the line throughout shift
  • Follow all safety and sanitation policies
