The role of Paisano Partner at Buca di Beppo is a vital leadership position responsible for overseeing and directing the overall operations of the restaurant to achieve sales and profitability goals while maintaining the highest standards of food quality, service, cleanliness, safety, and sanitation. This position involves a hands-on approach to managing both front of house and back of house activities. The Paisano Partner will lead, guide, and motivate the restaurant team (referred to as family members) and ensure a positive guest experience by fostering a team environment that encourages high morale and motivation.
Key responsibilities include managing daily restaurant operations, directing family members on a shift-by-shift basis, promoting excellent guest relations, managing alcohol service responsibly, and developing and implementing effective sales and marketing strategies. The Paisano Partner is also tasked with maintaining strict financial controls, including budget monitoring, cost management, inventory control, and ensuring compliance with all cash control policies and procedures. Maintaining cleanliness, safety, and the overall atmosphere of the restaurant, including music and lighting, is also essential to the role.
Additionally, the Paisano Partner will be responsible for hiring, training, and developing both management staff and family members, minimizing turnover by addressing issues promptly, and fostering open communication through regular meetings and an open-door policy. Job Requirements
- Two year associate’s degree or bachelor’s degree from four year college (desirable)
- Minimum two years experience as general manager in full service, high volume restaurant
- Five years management experience required for internal promotion candidates or Division Vice President approval
- Basic knowledge of Word and Excel
- Professional oral and written communication skills

Job Duties
- Provide family members, managers, and guests with a positive experience and atmosphere
- Ensure prompt, friendly service according to Buca di Beppo’s guidelines
- Direct overall activities and performance of family members on a shift-by-shift basis
- Drive positive guest experience through a front door and floor presence and accurate seating and quoting
- Promote an atmosphere of positive guest relations and respond to guest complaints professionally and timely
- Manage the responsible service of alcohol and maintain relationships with local authorities
- Develop and implement sales and marketing strategies
- Maintain and inspect dining, food preparation, and storage areas to ensure health and safety compliance
- Supervise cleaning and maintenance of equipment and ensure restaurant cleanliness inside and outside
- Review financial information such as sales and costs and monitor budget
- Maintain and control restaurant assets and inventory
- Control service contracts and compare costs
- Conduct line checks to ensure product standards
- Drive positive labor results through scheduling
- Manage capital expenditures
- Conduct inventories and calculate food and beverage costs
- Hire, train, motivate, and evaluate all family members and managers
- Create positive relationships with employees
- Implement programs to reward performance
- Conduct timely performance reviews
- Ensure compliance with company policies and legal regulations
