The role of Bread Production Manager at Eataly is a pivotal position entrusted with overseeing all bread and bakery product outputs for a particular Eataly location. These products include an assortment of breads, Roman-style pizza, rolls, focaccia, and seasonal specialty items that are integral to the brand's culinary offerings. This managerial role entails leading a robust team of 15 to 20 bakery employees who work in a 24-hour bakery environment ensuring that operational standards and production goals are consistently met.

Reporting directly to the Head Chef and functionally to the Corporate Head of Bakery at Eataly USA, the Bread Production Manager is responsible for upholding the highest standards of bread production using authentic Italian recipes and the finest ingredients such as natural yeast, organic flours, and local produce. The manager plays a crucial role in maintaining the bakery’s natural leavening processes and ensuring that all baked goods align with Eataly’s stringent quality criteria.

Beyond production oversight, the Bakery Manager is instrumental in the human resources aspect of the bakery operations which includes hiring, training, scheduling, performance evaluations, and motivating the bakery staff. Coordination with the General Manager of Retail is essential to guarantee smooth communication about daily bakery operations, staff coverage, and product availability. The role also includes handling incident resolution involving both employees and guests, emphasizing Eataly’s commitment to a safe and supportive work environment.

In addition to operational and team leadership responsibilities, the Bread Production Manager communicates regularly with key stakeholders such as the Executive Chef, Corporate Head of Bakery, and the GM of Retail to implement new recipes and maintain seamless inventory management. Financial oversight is a critical component of the role, requiring careful monitoring of sales, costs, budget compliance, and waste control to ensure profitability.

The Bread Production Manager ensures that the bakery maintains outstanding cleanliness and adheres strictly to all Department of Health regulations. This position offers a competitive salary range of $65,000 to $70,000 annually, reflecting the importance of the role within Eataly’s operations. Job Requirements

  • Ability to oversee a 24-hour-operating bakery, including working weekends, nights and holidays
  • Ability to lift over 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to work with a wood burning oven, electric pizza convection oven and commercial spiral mixer

Job Qualifications

  • 5+ years of experience in bread and related production
  • 2+ years of experience managing a sales and production team
  • Excellent communication skills
  • Outstanding time management skills
  • Proficiency in Microsoft Office
  • Degree from a post-secondary culinary arts training program highly preferred

Job Duties

  • Prepares bread products for restaurant and retail operations in accordance with Eataly's authentic Italian recipes and quality standards using the highest quality Italian and local flours and other ingredients
  • Maintains and nurtures natural yeast, local and organic flour, and naturally leavened products
  • Manages the bakery team of 15-20 employees: hires, schedules, approves vacation, submits payroll, provides feedback and motivation, trains on products, ingredients and processes, and handles terminations
  • Collaborates closely with the GM of Retail to ensure all necessary parties are aware of daily bakery activities, including absences, schedule coverage and product availability
  • Documents, investigates, elevates and resolves all employee and guest incidents
  • Communicates with the Executive Chef, GM of Retail and Corporate Head of Bakery on new recipes
  • Orders and monitors inventory of all ingredients and products for the bakery, including tracking and documenting daily transfers and waste in the appropriate system
  • Reviews financial information such as sales/costs and monitors budget to ensure efficient operation and spending within the specified budget
  • works with GM of Retail to correct any deviations from the budget
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Performs other duties as required or assigned
