Job Description

The Dixboro Project is a visionary and expansive hospitality concept located in the historic village of Dixboro, Michigan. At the heart of this unique establishment lies a perfect blend of world-class dining, transformational hospitality, and the serenity of abundant natural surroundings. The Dixboro Project encompasses several distinct yet interconnected components, each delivering a distinctive experience to visitors and locals alike.

One of these components is The Dixboro House, which serves as the premier restaurant outlet of the project. This establishment is housed within the original barn structure built in 1880, which has been meticulously restored to preserve its rich history and charm. The barn features exposed 140-year-old timbers, a gambrel vaulted ceiling, and the original stone fireplace, creating a warm and inviting atmosphere for guests. Alongside this historic ambiance, The Dixboro House operates a modern kitchen, blending tradition with contemporary culinary innovation to offer an unparalleled dining experience.

Complementing The Dixboro House is The Boro, the takeout and casual dining arm of The Dixboro Project. It operates as an all-day café that offers a variety of wood-fired pizzas, takeaway meals, expertly crafted baked goods, Roos Roast coffee, adult beverages, and much more. This café extends the project's reach beyond formal dining and into more casual, convenient options while maintaining high standards of quality and taste.

Integral to the entire Dixboro Project is its Bakery, responsible for producing world-class baked goods across all the project’s arms. The Bakery crafts a variety of products ranging from signature cakes and savory quiches to freshly baked breads that consistently impress customers. Its role is pivotal, as it supports the quality and reputation of both The Dixboro House and The Boro.

We are currently seeking an enthusiastic and dedicated Full-Time Bread Baker to join our expanding team. This position offers a unique opportunity to become an essential part of the Bakery, where you will be responsible for creating all bread products that serve both The Dixboro House and The Boro. The Bread Baker must effectively manage department inventory, maintain stringent quality control and uphold product development standards to ensure continuous innovation and excellence.

As a Bread Baker, you will handle key operational duties including ordering, production, receiving, unloading, proper storage, and product rotation—all while adhering strictly to the company’s high standards. Reporting directly to the Executive Pastry Chef, you will play a critical role in maintaining the integrity and consistency of our bakery output.

In this role, you will participate in daily tastings and quality scoring of bread, develop and maintain precise recipes, and adhere to production timelines to ensure efficiency and customer satisfaction. Your responsibilities also include safeguarding bakery equipment through proper maintenance practices, enforcing dough cutting and portion control standards, and following established health codes including the FIFO method and proper product dating and labeling.

Flexibility is a necessity, as you will be expected to collaborate with the pastry team especially during peak periods. Additionally, continuous product research and development will provide new opportunities to add value to our bakery offerings, helping to keep our culinary output fresh and exciting.

Job Requirements

  • Able to be exposed to smoke, steam, high temperatures, and humidity
  • Able to stand for long periods and move frequently
  • Frequently lift and carry 25 - 35 pounds
  • Occasionally lift up to 50 pounds
  • Regularly handle dough, tools, and equipment using fine motor skills and sustained grip strength
  • ServeSafe certifications are a plus

Job Qualifications

  • Prior experience working with bread in a commercial kitchen
  • Minimum 1+ years experience working in a professional kitchen environment
  • Strong communication and interpersonal skills
  • Knowledgeable of food safety standards
  • Strong organizational skills allowing you to adapt to business needs
  • Ethical and respectful towards guests, team, and business

Job Duties

  • Participate in daily tastings and score bread quality
  • Develop and maintain accurate recipes
  • Efficiently bake products and meet internal timeline expectations
  • Communicate ordering needs to supervisors in a timely fashion
  • Preserve the integrity of bakery equipment according to standard maintenance procedures
  • Ensure that proper dough cutting, portion control, and baking technique are being adhered to in the department
  • Follow pars with supervisor and adjust as needed to ensure demand is being met and waste is minimized
