Job Description

The Dixboro Project is an innovative and visionary hospitality concept situated in the historic village of Dixboro, Michigan. This unique establishment encompasses a variety of experiences, blending world-class dining, transformational hospitality, and an immersive connection to nature. At its heart lies The Dixboro House, a restaurant carved out from the original barn structure that dates back to 1880. This century-old barn has been lovingly restored, maintaining features such as exposed 140-year-old timbers, a gambrel vaulted ceiling, and the original stone fireplace, all combined with a modern kitchen designed to provide guests with a blend of rustic charm and contemporary comfort.

In addition to The Dixboro House, the project includes The Boro, a side-door takeout café offering woodfired pizzas, takeaway meals, expertly baked goods, Roos Roast coffee, adult beverages, and a variety of other delightful offerings throughout the day. The Bakery, forming a vital part of the overall operation, produces world-class baked goods such as signature cakes, savory quiches, and fresh bread used throughout the establishments.

We are currently seeking a dedicated and enthusiastic Full Time Bread Baker to join our bakery team. This position plays a crucial role in crafting all types of bread for both The Dixboro House and The Boro. The Bread Baker will be responsible for managing inventory within the department, maintaining strict quality control, developing new products, and ensuring that all processes comply with our high company standards.

Reporting directly to the Executive Pastry Chef, the Bread Baker ensures accurate ordering, production, receiving, unloading, storage, and product rotation. This role demands a commitment to preserving the integrity of equipment through standard maintenance procedures and strictly adhering to food safety regulations including proper labeling, dating, and health code compliance. The Bread Baker also participates in daily tastings to evaluate bread quality and contributes to the research and development of new bakery products that add value to the entire Dixboro Project experience.

Job Requirements

  • Prior experience working with bread in a commercial kitchen is a must
  • Minimum 1+ years experience working in a professional kitchen environment
  • Able to be exposed to smoke, steam, high temperatures, and humidity
  • Able to stand for long periods and move frequently
  • Frequently lift and carry 25 - 35 pounds
  • Occasionally lift up to 50 pounds
  • Regularly handle dough, tools, and equipment using fine motor skills and sustained grip strength
  • Strong communication and interpersonal skills
  • Knowledgeable of food safety standards
  • Strong organizational skills allowing you to adapt to business needs
  • Ethical - a need to 'do the right thing'

Job Duties

  • Participate in daily tastings and score bread quality
  • Develop and maintain accurate recipes
  • Efficiently bake products and meet internal timeline expectations
  • Communicate ordering needs to supervisors in a timely fashion
  • Preserve the integrity of bakery equipment according to standard maintenance procedures
  • Ensure that proper dough cutting, portion control, and baking technique are being adhered to in the department
  • Follow pars with supervisor and adjust as needed to ensure demand is being met and waste is minimized
  • Properly date and label all items and ensure FIFO and health code standards are maintained
  • Maintain flexibility by helping our pastry team during busy periods
  • Research and develop new products to add value to the overall bakery offerings
