Job Requirements

  • Must be able to speak, read, write and understand the primary language(s) used in the workplace
  • Must be able to read and write to facilitate communication
  • Requires good communication skills, both verbal and written
  • Must possess basic computational ability
  • Must possess basic computer skills
  • Must have complete knowledge of POS system
  • Knowledge of appropriate table settings and service ware
  • Ability to describe all menu items, prices and methods of preparation
  • Must have complete knowledge and use service guidelines outlined in the Front Server Manual
  • Must have complete knowledge of products and specifications outlined in the dinner menu matrix and cuisine, beverage and wine manuals
  • Further duties may be added at manager's discretion
  • Must be minimum age to serve alcohol
  • Must be able to stand and exert mobility for at least 8 hours
  • Must be able to lift trays and equipment up to specified weights

Job Qualifications

  • Minimum 3-4 years of fine dining leadership experience
  • At least 5 years of dining room experience with thorough knowledge of fine dining service procedures
  • Extensive food and wine knowledge
  • High school or equivalent education required
  • Strong dedication toward learning and motivation to progress in fine dining
  • Excellent basic math skills and experience operating POS and Microsoft based systems
  • Familiarity with Microsoft Office Suite
  • Financial acumen and experience with BINWISE and InDesign preferred
  • Impeccably groomed with good hygiene and posture
  • Responsive to feedback from Chefs and Managers
  • MS Level two certification preferred
  • Cleanliness, organization, and ability to work well in team settings

Job Duties

  • Understand and perform job duties to the expectations of Bourbon Steak and the restaurant Service, Food, Beverage and Wine manuals
  • Recommend and sell wine to guests on the floor
  • Responsible for inventory, ordering and maintenance of wine cellar, wine lists and all wine collateral
  • Conduct monthly physical wine inventory with inventory reports
  • Maintain budget with regards to wine inventory and cost of goods sold
  • Execute and facilitate service in cooperation with other Sommeliers, Captains and managers
  • Describe dinner features including menu changes and daily additions
  • Communicate with Management team/Chef on VIP procedures and special requests
  • Conduct continuous wine training with service team and provide training for all new hires
  • Participate in pre-shift meetings and present changes
  • Welcome all guests and ensure responsive, professional, and gracious service
  • Answer guest inquiries about menu, food items, or wine list
  • Liaise with servers to communicate guest needs
  • Assist Chef in expediting food to dining room
  • Maintain food and product standards
  • Maintain clean, safe environment in dining room and service stations
  • Comply with all health, safety and labor regulations
  • Train new employees and monitor their performance
  • Supervise restaurant operations during service and monitor guest satisfaction
  • Support servers, bussers, and food runners including room inspection, staff presentation, greeting guests, taking orders, delivering food, wine service, handling VIP instructions, monitoring guest satisfaction, recording information, and any other management assigned tasks
