The role of the Sommelier at Bourbon Steak is integral to maintaining and enhancing the elevated dining experience. This position involves motivating and mentoring the service staff in wine knowledge, inspiring and delighting guests through impeccable wine service, and fostering an environment where excellence in food, wine, and service is paramount. The Sommelier is responsible for ensuring seamless service operations throughout the dining room by collaborating closely with other service staff and kitchen management. Additionally, the Sommelier handles inventory and maintenance of the wine cellar, oversees ordering, and manages the wine list and related collateral to maintain a comprehensive and enticing wine program aligned with the restaurant's standards and budget goals.
In this role, the Sommelier also conducts continuous wine training for team members, ensuring staff are well-equipped with product knowledge and service techniques to enhance guest satisfaction. Job Requirements
- Must be able to speak, read, write and understand the primary language used in the workplace
- Must be able to read and write to facilitate communication
- Requires good verbal and written communication skills
- Must possess basic computational ability
- Must have basic computer skills and complete knowledge of POS system
- Knowledge of appropriate table settings and service ware
- Ability to describe all menu items, prices and preparation methods
- Must understand and use service guidelines outlined in front server manual
- Must have complete knowledge of products and specifications in dinner menu matrix and wine manual
- Further duties may be assigned at manager's discretion
- Must be minimum age to serve alcohol
- Must maintain neat, clean, and well-groomed appearance per service manual standards
- Must be able to stand and move for long periods
- Must be able to lift up to 30 pounds and maneuver trays, carts, and equipment
- Must be able to communicate effectively with management, guests, and staff
Job Qualifications
- Minimum 3-4 years of fine dining leadership experience
- Extensive knowledge of food, wine, service procedures and functions
- High school diploma or equivalent
- Strong dedication to learning and motivation to advance in fine dining
- Excellent basic math skills and proficiency with cash register POS and Microsoft systems
- Familiarity with Microsoft Office Suite
- Financial acumen
- Preferred BINWISE and InDesign experience
- Impeccable grooming and professional appearance
- Responsive to feedback from chefs and managers
- Preferred MS Level two certification
Job Duties
- Understand and perform job duties according to service, food, beverage and wine manuals
- Recommend and sell wine to guests
- Manage inventory, ordering, and maintenance of wine cellar and wine lists
- Conduct monthly physical wine inventory and reporting
- Maintain budget compliance regarding wine inventory and cost of goods sold
- Facilitate service with team members and communicate between front and back of house
- Describe dinner features, menu changes, and daily additions
- Coordinate VIP procedures and special requests with management and kitchen
- Conduct continuous wine training and onboarding for new hires
- Participate in pre-shift meetings and present menu updates
- Welcome guests and ensure professional, gracious service
- Answer guest inquiries about menu, wine list, or special requests
- Collaborate with servers on guest needs and order details
- Assist chefs in expediting food delivery
- Ensure consistent food and product quality according to standards
- Maintain cleanliness and safety of dining areas and service stations
- Comply with health, safety, and labor regulations
