The Sommelier role at Bourbon Steak is a pivotal position that encompasses leadership, mentorship, and exceptional guest service. Serving not only as a wine expert but also as a vital member of the service team, the Sommelier motivates and educates staff on wine knowledge, inspiring guests with unparalleled wine service. This role demands a professional, conscientious individual who excels in communication and team collaboration to ensure smooth operations throughout the dining room. Beyond recommending ideal wine pairings, the Sommelier is responsible for managing the wine cellar, overseeing inventory and ordering, maintaining budgets concerning wine costs, and facilitating seamless communication between the front of house and back of house. The Sommelier is also engaged in continuous staff training, overseeing VIP guest procedures, and participating in pre-shift meetings to stay current with menu changes and specials.

The position requires a deep understanding of fine dining service standards and an extensive knowledge of food and beverages, especially wine. The Sommelier is expected to deliver attentive and gracious service while maintaining a clean, safe dining environment and adhering to all health, safety, and labor regulations. Job Requirements

  • Must be able to speak, read, write and understand the primary workplace language
  • Must be able to read and write
  • Good verbal and written communication skills
  • Basic computational ability
  • Basic computer skills and complete knowledge of POS system
  • Knowledge of appropriate table settings and service ware
  • Must be able to use suggestive selling techniques
  • Knowledge of service guidelines outlined in Front Server Manual
  • Knowledge of products and specifications in menu and beverage manuals
  • Must be impeccably groomed and maintain good hygiene
  • Must be responsive to feedback from chefs and managers
  • Must be minimum age to serve alcohol
  • High school or equivalent education
  • Cleanliness, organization, and teamwork skills
  • Must be able to stand and move for long periods
  • Ability to lift and maneuver up to 30 pounds
  • Ability to work in varying temperature conditions
  • Ability to perform physical demands including bending, stooping, and reaching
  • Manual dexterity to operate equipment
  • Responsive to constructive feedback

Job Qualifications

  • Minimum 3-4 years of fine dining leadership experience
  • Extensive knowledge of food and wine
  • Strong dedication to learning and progression in fine dining
  • Excellent basic math skills
  • Ability to operate POS systems and Microsoft-based computer systems
  • Familiarity with Microsoft Office Suite
  • Financial acumen
  • Preferred BINWISE and InDesign experience
  • MS Level Two certification preferred
  • Knowledge of service guidelines and dinner menu matrix
  • Ability to describe menu items, prices, and preparation
  • Excellent communication skills

Job Duties

  • Understand and perform job duties according to Bourbon Steak and restaurant service, food, beverage and wine manuals
  • Recommend and sell wine to guests
  • Manage inventory, ordering, and maintenance of wine cellar, wine lists and related collateral
  • Conduct monthly wine inventories and prepare inventory reports
  • Maintain budget and control costs of goods sold related to wine
  • Coordinate service execution with other sommeliers, captains, and managers
  • Facilitate communication between front of house and back of house
  • Describe dinner features and menu changes to guests
  • Communicate VIP procedures and special requests with management and chefs
  • Conduct continuous wine training for service team and new hires
  • Participate in pre-shift meetings and present new menu items
  • Welcome guests and provide professional, responsive service
  • Answer menu and wine list questions
  • Liaise with servers to ensure guest needs are met
  • Assist chefs in expediting food
  • Ensure food and products meet restaurant standards
  • Maintain cleanliness and safety in dining areas
  • Comply with all health, safety, and labor regulations
  • Train new employees and monitor early performance
  • Supervise restaurant operations during service and monitor guest satisfaction
  • Support service staff including servers, bussers, and food runners with service tasks and VIP handling
  • Inspect dining room for setup and cleanliness
  • Record nightly information and complete logs
