The role of the Bourbon Steak Chef de Cuisine is a pivotal position within the restaurant. This leadership role involves operating the restaurant day-to-day with efficiency and professionalism. The Chef de Cuisine is entrusted with overseeing all culinary operations, ensuring the highest quality of products served in alignment with Bourbon Steak’s recipes, portioning, cooking, and serving standards. They will lead the Bourbon Steak management staff, coordinating planning, organizing, training, and leadership efforts across sales, costs, employee retention, guest service, and food quality. This role requires a deep understanding of the restaurant’s culinary philosophy and policies, along with the ability to contribute to the dynamic menu evolution for both the main dining room and private rooms.

Key responsibilities include managing inventory and purchasing, ensuring all equipment is maintained and clean, and guaranteeing that all food products are received and stored following established standards. The Chef de Cuisine develops and mentors staff, creating opportunities for professional growth and fostering a culture of respect among team members. This individual will maintain a professional demeanor appropriate for a luxury environment and act with integrity and honesty to promote the mission and values of Bourbon Steak and JW Marriott. The position requires collaboration with the Executive Chef and Human Resources Director to sustain an internship program that embraces diversity, education, and discipline. The Chef de Cuisine also plays a critical role in facilitating effective communication between the kitchen team and other departments, ensuring seamless operations and exceptional guest experiences.

Attention to detail, problem-solving, and adherence to federal, state, county, and municipal regulations related to health, safety, and labor are essential to success in this role. The Chef de Cuisine participates in employee meetings, prepares and manages paperwork, and conducts employee performance appraisals. This role is also hands-on, with expectations to fill in where necessary to maintain guest service standards and operational efficiency. Physical demands of the position include agility to move quickly in confined spaces, the ability to push or pull up to 100 pounds, lift 50 pounds, and work under high stress in environments of extreme heat and cold. Excellent multitasking, clear thinking in intense situations, and stamina to stand or walk for extended periods are required. Job Requirements

  • Represent the restaurant professionally through effective communication, cooperation and relationships with all business partners

  • Understand completely all programs, procedures, standards, specifications, guidelines and training programs
  • Offer positive solutions to problems or issues and be a voice that is part of the decision making team
  • Possess a qualifying certificate in food protection from the local department of health that has jurisdiction over the employing property

Job Qualifications

  • High school diploma or equivalent
  • Culinary degree or full apprenticeship completion preferred
  • A minimum of five years experience in a culinary management role at a relevant luxury establishment

Job Duties

  • Lead the Bourbon Steak management staff ensuring that service standards are on par with accreditation sources including Zagat, Gayot, Relais & Chateaux, Mobil 5 star, AAA Five Diamond, Wine Spectator and Michelin star
  • Ensure that all guests feel welcome and are given responsive, friendly and courteous service at all times
  • Be responsible for the timely updating of the RecipeXchange website and all of its content
  • Oversee and coordinate the planning, organizing, training and leadership necessary to achieve stated objectives in sales, costs, employee retention, guest service and satisfaction, food quality, cleanliness and sanitation
  • Provide leadership to create a culture and work environment based upon respect providing opportunities for staff to learn, grow and develop their abilities through training of employees and creating a positive, productive working environment
  • Assume 100 percent responsibility for the quality of products served
  • Attend all scheduled employee meetings and bring suggestions for improvement
  • Document all recipes in a standard kitchen format and share with kitchen employees
