We are seeking a skilled and passionate Pit Master / Smoker to join our dynamic team. The Pit Master / Smoker will be the cornerstone of our BBQ operations, responsible for the preparation of our signature smoked meats, seasonings, and sauces with the utmost precision and care. This role demands a high level of dedication and expertise as you will handle the early morning setup, ensuring smokers are fired up by 5:00 AM to maintain our commitment to quality and timeliness. You will work closely with our Sous Chef or Executive Chef to ensure that each product meets the high standards of quality and flavor that our patrons expect.

In this position, the Pit Master / Smoker will manage various tasks including fire management to sustain optimal smoking conditions, overseeing the safekeeping and handling of raw meats according to stringent food safety guidelines, and executing recipes with precision after a comprehensive training period. The role requires adaptability to meet the dynamic needs of the restaurant, whether that means smoking diverse proteins, managing multiple smokers efficiently, or working within tight time constraints. A meticulous eye for quality control is essential to ensure that only premium products make their way to our guests.

Additionally, the Pit Master / Smoker plays an active role in maintaining a clean and organized workspace, adhering strictly to health and safety regulations, packaging products, organizing storage, checking in deliveries, and supporting catering efforts when needed. Physical stamina is vital as the role involves standing for the entire shift, working in high-temperature environments, and lifting heavy items up to 80 pounds. Effective communication skills and the ability to multitask in a high-energy, fast-paced kitchen are also critical components for success in this role.
