As a Pit Master / Smoker at our restaurant, you will play a vital role in the barbecue operation, responsible for preparing our signature smoked meats, seasonings, and sauces to perfection. Your expertise will ensure that each dish meets our high standards and satisfies our guests’ expectations. This role involves starting the day early to fire up smokers, managing various types of meats with strict adherence to food safety guidelines, and maintaining optimal fire conditions for consistent and delicious smoke flavors. You will follow established recipes closely, accept feedback with professionalism, and work independently after thorough training. The role requires the ability to multitask effectively while adapting to the daily needs of the restaurant and handling time constraints efficiently. Your keen eye for quality control guarantees that only the best products reach our customers. Additionally, you will assist with organizing storage, processing deliveries, packaging products, and supporting catering services.

This is a physically demanding position requiring stamina and the ability to work in high temperatures throughout your shift. The successful candidate should be ready to stand for long periods, frequently bend, reach, stoop, and lift weights of up to 80 pounds. Effective communication within the team and a commitment to maintaining a clean, safe, and organized work environment are essential. Job Requirements

  • High school diploma or equivalent
  • Previous experience in a culinary or barbecue setting preferred

Job Duties

  • Early morning keyholder: start the day before 5:00 AM ensuring smokers are fired up and ready
  • Handle raw meats with expert knowledge following food safety guidelines
  • Build and maintain optimal fire conditions for consistent flavorful smoking
  • Follow recipes accept feedback and work independently after training
  • Pivot with daily needs managing different proteins multiple smokers and time constraints
  • Ensure quality control so only the best products make it to the plate
  • Load and unload smokers organize coolers dry storage check in deliveries package products and assist with catering needs
  • Maintain a clean organized work environment and follow health and safety regulations
