Job Requirements
- Stand for entire shift
- Work in high temperatures for majority of shift
- Bend, reach, and stoop frequently
- Lift up to 80 lbs
- Communicate effectively with team
- Prior experience working with smokers preferred
- Reliable and punctual
- Ability to follow detailed recipes and instructions
- Willingness to work early morning hours
Job Qualifications
- High school diploma or equivalent
- Previous experience as a pit master or smoker preferred
- Knowledge of food safety practices and meat handling
- Ability to manage fire and smoking techniques effectively
- Strong attention to detail and quality control
- Capability to work early mornings and physically demanding shifts
- Excellent problem-solving skills and ability to multitask
- Team player with good communication skills
- Ability to work independently after training
Job Duties
- Start the day before sunup by firing up smokers and acting as a keyholder
- Handle raw meats with expert knowledge following food safety guidelines
- Build and maintain optimal fire conditions for consistent flavorful smoking
- Follow recipes, accept feedback, and work independently after training
- Adapt to daily restaurant needs including smoking different proteins and managing multiple smokers
- Ensure quality control so only the best products reach the plate
- Load and unload smokers, organize storage, check deliveries, package products, and assist with catering
- Maintain a clean, organized work environment and adhere to health and safety regulations
