The role is focused on the behind-the-scenes preparation of a variety of menu items, including appetizers, sandwiches, calzones, pizza, grilled dishes, and pasta, following Bertucci's exact specifications. This position requires a flexible and knowledgeable team member capable of supporting multiple stations in the kitchen, ensuring that food preparation is done accurately and efficiently. The job includes responsibilities such as food rotation, set-up and break-down of workstations, stocking wood for the brick ovens, and maintaining the cleanliness and organization of utensils and work areas.

Attention to detail and adherence to safety and sanitary standards are paramount in this role. The successful candidate will monitor equipment like ovens, coolers, and freezers to maintain proper temperatures and report any malfunctions promptly. They will also inspect stock levels and work closely with management to establish daily prep lists to ensure smooth kitchen operation. Job Requirements

  • High school diploma or equivalent
  • Previous experience in food preparation or kitchen environment preferred
  • Ability to follow detailed recipes and instructions
  • Knowledge of food safety regulations
  • Capable of working flexible schedules
  • Strong attention to cleanliness and organization
  • Ability to lift and carry moderately heavy items
  • Effective communication skills

Job Duties

  • Knowledgeable in all behind-the-line areas to allow flexible scheduling
  • Perform food rotation, set-up and break-down of work stations
  • Stock wood and ensure presentation of products
  • Clean utensils and maintain a sanitary work area
  • Monitor and maintain accurate temperatures of ovens, coolers, and freezers
  • Inspect stock levels and collaborate with manager to establish daily prep list
  • Report equipment malfunctions and maintain equipment in sound working order
  • Ensure safety policies are followed and prevent hazards in work area
