Chotto Matte is a globally recognized Japanese-Peruvian fusion restaurant group with locations in London, Manchester, Toronto, and San Francisco. We are currently seeking an experienced Bar Manager to join our San Francisco team. This is a full-time role offering a competitive annual salary range of $90,000 to $100,000, depending on experience. As the Bar Manager, you will be responsible for leading and inspiring our talented bar team while managing all aspects of bar operations within a high-volume, dynamic venue. This role requires hands-on leadership, a passion for guest service, and the ability to maintain high standards during peak service times, which includes late nights since the venue closes at 1 a.m. on Fridays and Saturdays.

The Bar Manager will play a critical role in maintaining the quality and consistency that our guests expect, ensuring an exceptional experience in our fast-paced environment. Key responsibilities include overseeing daily bar operations, recruiting and training staff, managing stock and supplier relationships, and ensuring compliance with licensing and health regulations. You will also be instrumental in developing and maintaining a strong bar culture focused on product knowledge, service excellence, and team engagement.

In addition, this position requires creativity and innovation in bar menu development to keep offerings fresh, seasonal, and exciting, with a special emphasis on cocktails and wine. Being a visible and motivating presence on the floor, especially during peak hours and late-night shifts, is essential for leading by example and energizing the team.   • Strong leadership skills and proven experience in hiring and training bar teams
  • Comfortable and confident working late nights
  • Hands-on approach with the ability to lead from the front and energise your team

Job Duties

  • Oversee the day-to-day running of our high-volume bar ensuring consistency and quality in every drink served
  • Recruit train and develop a high-performing bartender team
  • Deliver an exceptional guest experience in a fast-paced late-night environment
  • Create and maintain a strong bar culture that focuses on knowledge service and team engagement
  • Work closely with senior management and the floor team to ensure seamless service
  • Ensure compliance with all licensing health and safety and hygiene regulations
  • Manage stock levels ordering and supplier relationships
  • Keep the bar menus innovative seasonal and exciting with a strong focus on cocktails and wine
  • Be a visible leader on the floor especially during peak trading hours and late-night shifts
