The role available with Pacific Hospitality Group is for a skilled food preparation professional who will contribute to the kitchen’s efficiency and uphold the company's high standards for food quality and safety. This position is crucial in ensuring that food items such as salads, soups, sauces, meats, and vegetables are prepared with attention to detail, following prescribed recipes and guidelines. Responsibilities include butchering and trimming chicken, fish, and shellfish, reading menus to estimate food requirements, and appropriately storing food supplies to maintain freshness and safety.

The ideal candidate will handle various kitchen equipment such as blenders, mixers, graders, slicers, and knives to measure and mix ingredients accurately. They will be responsible for baking, roasting, broiling, and steaming various food items, ensuring perfect seasoning and cooking temperatures, often confirmed through tasting and thermometers. Food presentation is also part of the role, including carving meats, portioning food onto plates, and garnishing servings to meet both taste and aesthetic standards.

Maintaining a clean and safe work environment is a priority, so adherence to all food handling, sanitation, and health department guidelines is mandatory. The role requires consistent punctuality and dependability for scheduled work shifts, as well as teamwork and communication skills to assist in food product control, waste management, and kitchen organization. Cleaning kitchen equipment and preparation areas, caring for storage spaces, and reporting any unsafe conditions or equipment maintenance needs are part of daily responsibilities.

Candidates with prior food preparation experience are preferred, particularly those who possess strong knife handling skills and can follow recipes and instructions independently. Culinary training or degrees are advantageous, as is a current Food Handlers Card or the willingness to obtain one shortly after employment. Job Duties

  • Prepares food items such as salads, soups, sauces, meats, and vegetables according to prescribed recipes and guidelines
  • Butchers chicken, fish, and shellfish
  • Cuts, trims and bones meat prior to cooking
  • Reads menu to estimate food requirements and requisitions food from storage
  • Adjusts thermostat controls to regulate/maintain appropriate temperature of ovens, broilers, grills, roaster and steam kettles
  • Measures and mixes ingredients according to recipe using a variety of kitchen utensils and equipment such as blenders, mixers, grinders, slicers, and knives
  • Bakes, roasts, broils and steams meats, fish, vegetables and other foods
  • Adds seasoning to foods during mixing or cooking according to recipe and adjusts as needed
  • Observes and tests foods being cooked by tasting, smelling, and piercing with fork to observe that it is cooked
  • Uses thermometer to ensure food is cooked/maintained at proper temperature
  • Carves meats, portions food onto serving plates, adds gravies and sauces and garnishes servings
  • Follows all standard food handling, sanitation and health department guidelines
  • Ensures compliance with federal, state, local and company health, safety, and sanitation standards
  • Reports to work as scheduled (on time and on regular basis)
  • Washes, peels, cuts and shreds vegetables and fruits to prepare them for use
  • Assists in controlling all food products, leftovers, waste and refrigeration organization
  • Cleans and sanitizes equipment, wares, walls, and floors in kitchen, walk-in coolers and all storage areas as directed
  • Maintains work area in clean and organized manner
  • Prepares work area for next service period, including emptying trash receptacles
  • Notifies management of unsafe conditions, needed maintenance of any equipment and any accidents
