The role currently open is for a Food Preparation Cook within their culinary team. This position is integral to maintaining the highest standards of food quality and safety in Pacific Hospitality Group’s operations. The Food Preparation Cook will be responsible for preparing a variety of food items such as salads, soups, sauces, meats, and vegetables strictly according to prescribed recipes and guidelines to ensure consistency and quality. The role involves a hands-on approach to butchering chicken, fish, and shellfish, along with cutting, trimming, and boning meats before cooking processes. The cook will also manage inventory by reading menus to estimate food requirements and requisitioning ingredients accordingly. Operating and adjusting kitchen equipment like ovens, broilers, grills, and steam kettles to maintain the appropriate cooking temperatures is a key responsibility, as is measuring and mixing ingredients professionally using blenders, mixers, grinders, slicers, and knives. The candidate will also bake, roast, broil, and steam a wide range of foods, seasoning them appropriately and ensuring they meet the highest safety and taste standards by testing through tasting, smelling, or using thermometers. Further duties include carving meats, plating food with gravies and garnishes, and adhering rigorously to food handling, sanitation, and health department standards to maintain excellent hygiene and safety practices. Reliability and punctuality are essential, as is the ability to work collaboratively within a team. Additional responsibilities include preparing vegetables and fruits, controlling food products and waste, organizing refrigeration, maintaining cleanliness in the kitchen, and ensuring a safe work environment by reporting unsafe conditions or accidents promptly. Job Requirements
- High school diploma or equivalent
- at least one year of food preparation experience
- knowledge of kitchen safety and sanitation standards
- ability to follow recipes and instructions accurately

- readiness to obtain food handlers certification if not already held
Job Qualifications
- At least one year of prior food prep experience
- knowledge of food preparation and knife handling skills
- ability to read and comprehend simple instructions, recipes, short correspondence, and memos
- ability to work as part of a team
- culinary training or degree is preferred
- current Food Handlers Card or willingness and ability to obtain one within 30 days of employment
Job Duties
- Prepares food items such as salads, soups, sauces, meats, and vegetables according to prescribed recipes and guidelines
- Butchers chicken, fish, and shellfish
- cuts, trims, and bones meat prior to cooking
- Reads menu to estimate food requirements and requisitions food from storage
- Adjusts thermostat controls to regulate/maintain appropriate temperature of ovens, broilers, grills, roaster, and steam kettles
- Measures and mixes ingredients according to recipe using kitchen utensils and equipment such as blenders, mixers, grinders, slicers, and knives
- Bakes, roasts, broils, and steams meats, fish, vegetables and other foods
- adds seasoning during mixing or cooking
- Observes and tests foods by tasting, smelling, and piercing with fork to ensure proper cooking
- Uses thermometer to ensure food is cooked/maintained at proper temperature
- Carves meats, portions food onto serving plates, adds gravies and sauces, and garnishes servings
- Follows standard food handling, sanitation, and health department guidelines
- Washes, peels, cuts, and shreds vegetables and fruits
- Assists in controlling all food products, leftovers, waste, and refrigeration organization
- Cleans and sanitizes kitchen equipment, wares, walls, floors, walk-in coolers, and storage areas
- Maintains work area in clean and organized manner
- Prepares work area for next service period including emptying trash receptacles
- Reports unsafe conditions, needed maintenance, and any accidents to management
- Reports to work as scheduled (on time and regularly)
