Currently, Flying Horse Resort and Club is seeking a Sous Chef to support the kitchen operations by assisting the Executive Chef and other Sous Chefs in delivering consistently high-quality food service. This is a vital role within the culinary team focused primarily on the Ala Carte line as well as assisting in the banquet production kitchen. The position requires an individual who can perform effectively under pressure, demonstrate excellent teamwork skills, and complies with stringent food health and safety regulations. The Sous Chef will be responsible for preparing and presenting food items that meet the high standards of the resort, maintaining cleanliness and sanitation in line with food safety policies, and following proper procedures in food handling, storage, and preparation. This role demands vigilance and proactive problem solving, requiring the Sous Chef to anticipate challenges, handle multiple tasks concurrently, and ensure smooth daily kitchen operations. Job Duties
- Support other Sous Chefs and Executive Chef in delivering high-quality food
- comply with food health and safety regulations and sanitation policies
- work effectively in an open kitchen setting
- evaluate and select among alternative courses of action quickly and accurately
- maintain cleanliness and sanitation practices in the kitchen
- follow proper food handling, holding, re-heating, and cooling procedures
- be present in the kitchen and assigned station as required
- follow instructions and recommendations from supervisors
- perform daily prep and assigned duties to meet standards and quality
- be proficient in all stations of the Ala Carte line and production kitchen
- handle workplace problems including anticipating, preventing, identifying, and solving issues
- produce work according to deadlines and assist others
- estimate daily production needs
- ensure production, preparation, and presentation of food of highest quality
- maintain full awareness of menu items, recipes, production methods, and presentation standards
- operate and maintain line equipment and report malfunctions
- establish and maintain effective inter-departmental relationships
- have knowledge of menu creation while maintaining food cost and quality
- check proper station standards including labels, dates, and food storage
- consult with Sous Chef and Executive Chef on daily requirements, service, and events
- maintain a friendly and warm demeanor
- provide daily feedback and report issues as they arise
