The role of Cook at Fairmont Grand Del Mar is central to maintaining the high culinary standards that define the resort. This position involves producing all hot and cold food items for restaurant service and catering functions according to the resort's exacting standards and specifications. The cook is responsible for preparing food of consistent quality, adhering strictly to standard operating procedures for food safety and sanitation. This includes date labeling and proper rotation of food containers, controlling food waste, and ensuring all perishables are maintained at correct temperatures. The cook plays a vital role in kitchen operations by preparing and starting food items ahead of service without overestimating needs, assisting with prep work, and supporting buffet stocking and line setup.

In this role, collaboration with other kitchen stations and departments is crucial. The cook must communicate effectively and positively contribute to the team environment while managing workload according to the standards of Fairmont Grand Del Mar. Job Requirements

  • High school diploma or equivalent
  • Previous cooking experience in a high volume culinary environment preferred
  • Must be able to stand for extended periods and lift moderate weight
  • Ability to follow safety and sanitation guidelines
  • Must be able to work flexible hours including weekends and holidays
  • Food Handler Card
  • Basic English communication skills

Job Qualifications

  • Ability to verbally communicate effectively with guests and co-workers
  • Ability to push pull bend stoop and reach upward
  • Ability to cook on carving pasta omelet and stir fry stations
  • Ability to work all banquet functions
  • Ability to cut trim and bone meat prior to cooking
  • Ability to wash peel cut and shred fruits and vegetables
  • Ability to maintain positive relationships with other departments
  • Ability to bake broil sauté and steam meats fish vegetables and other foods
  • Ability to measure and mix ingredients according to recipes
  • Ability to speak and understand basic English
  • Ability to communicate well verbally and in writing in basic English

Job Duties

  • Prepare food of consistent quality following Fairmont Grand Del Mar standards
  • Date all food containers and rotate per Standard Operating Procedures
  • Practice safety standards at all times
  • Cook orders as requested including special requests
  • Start food items prepared ahead of time without overestimating needs
  • Practice sanitation standards at all times
  • Maintain proper temperatures for perishables
  • Properly portion all items on assigned station
  • Control food waste loss and usage per SOP
  • Assist in setting up plans to correct food cost problems
  • Check pars for shift use and determine necessary preparation
  • Note out-of-stock items or shortages
  • Assist in keeping buffet stocked
  • Assist in prep work of vegetables and condiments
  • Return unused food items to storage with proper covering and dating
  • Carry out all reasonable requests from management within capabilities
