This role is integral to maintaining the exceptional culinary standards The Ritz-Carlton is known for. As a key member of the banquet culinary team, you will be responsible for determining food presentation based on the Banquet Event Order (BEO), creating decorative food displays, and preparing special meals or substitute items as needed. Your role will involve assisting with banquet plate-ups, ensuring proper portion control, food garnish, and attractive arrangement of dishes. You will monitor food quality and quantity, prepare plate and platter presentations, set up and operate action stations during banquets or buffets, and carve buffet meats upon guest request.

Additionally, you will support the banquet and buffet operations by maintaining adequate stock levels of all items and handling various cooking methods using ovens, stoves, grills, microwaves, and fryers. Your responsibilities will extend to preparing ingredients through portioning, chopping, and storage, ensuring that all food preparation adheres to established recipes, quality standards, and presentation checklists, including cold food preparation.

Beyond culinary tasks, this position entails assisting management in hiring, training, scheduling, evaluating, coaching, and motivating employees. You will serve as a role model within the team, uphold company safety and security policies, report any maintenance issues, accidents, or unsafe conditions, and complete required safety training and certifications. A professional personal appearance is vital, as is protecting company assets and supporting the team to achieve collective goals. The role demands physical endurance to stand, sit, or walk for extended periods and the ability to lift and maneuver items weighing up to 50 pounds without assistance. As a dynamic environment, it requires flexibility to perform other reasonable duties assigned by supervisors.

This position does not require prior supervisory experience but favors candidates with a Technical, Trade, or Vocational School Degree and a minimum of three years in related work experience. Job Requirements

  • Technical, trade, or vocational school degree
  • At least 3 years of related work experience
  • Ability to stand, sit, or walk for an extended period of time
  • Ability to lift or move objects weighing up to 50 pounds without assistance
  • Ability to reach overhead and below the knees including bending, twisting, pulling, and stooping
  • No supervisory experience required
