The Banquet Cook position at Ridglea Country Club plays a crucial role in upholding the club's reputation for excellence in food service, particularly during banquet events. Reporting directly to the Executive Chef and Banquet Sous Chef, the Banquet Cook is responsible for the production of all food items prepared for banquets. This role requires meticulous attention to food cost control, adherence to standard operating procedures, and effective management of daily production activities in the banquet kitchen. Job Duties

  • Possess technical skills needed to fulfill required job duties

  • produce correct amount of mise en place using recipes for all items with minimal waste
  • prepare foods to proper doneness and seasoning
  • assist with preparation of other food products on serving line as needed

  • maintain sanitation by properly cooling and storing foods and keeping station clean
  • follow hygiene practices including dressing professionally and using gloves
  • manage food production throughout banquet functions ensuring quality and presentation

  • adhere to food and labor cost goals and take corrective actions
  • attend monthly kitchen meetings
  • communicate with executive chef and sous chefs daily
  • perform assigned tasks accurately and timely

  • manage dating, labeling and covering of all refrigerated items
  • maintain safety and security in workstation
  • keep walk-in coolers clean and follow FIFO standards
