The role of Banquet Cook at Sonesta International Hotels is centered around preparing and cooking food with a meticulous focus on cleanliness, sanitation, and maintaining high quality standards. This position specifically handles the preparation of all banquet hot food items, ensuring consistency in taste, timeliness in delivery, and cost-effectiveness in operation. As a Banquet Cook, you will play an essential role in supporting large events and functions held throughout the hotel, demonstrating deep knowledge of various food stations and the banquet service process.

Your responsibilities will include controlling the quality and consistency of all food items served at banquet events, ensuring that prep lists and work stations are set up promptly and ready for service. You will demonstrate mastery in a variety of cooking techniques including sautéing, braising, poaching, grilling, frying, and steaming, while efficiently using culinary tools such as knives, pans, grills, ovens, and slicers safely and competently.

The role demands a strong ability to produce all orders consistently, quickly, and in adherence to established quality standards while maintaining a clean and organized work area. You will be expected to assist in supervising and instructing junior cooks, work collaboratively with the kitchen and banquet management teams, and contribute to controlling food and labor costs. Additionally, flexibility is important as work schedules may include nights, weekends, and holidays.

Sonesta offers a competitive pay range for this role, between $25.50 and $27.50 per hour, with pay based on job-related knowledge, skills, and experience. Job Duties

  • Controls quality and consistency of all food served
  • Ensures that station or relevant prep list is set in a timely manner
  • Demonstrates knowledge of all stations in the department
  • Ensures all supplies necessary for service are available before service
  • Demonstrates knowledge of all food items produced by an assigned station
  • Handles and stores food properly and safely
  • Produces all orders consistently, quickly, and in accordance with established quality standards
  • Responsible for execution of all banquet functions when assigned
  • Prepares and cooks breads and pastries as appropriate
  • Reviews production sheet to ensure baked goods are produced
  • Demonstrates safe and competent use of all tools including knives, pots, pans, stoves, ovens, grills, slicers, steamers
  • Demonstrates knowledge of all basic cooking techniques such as saute, braise, poach, grill, poele, fry, steam
  • Respects scheduled hours of work and have exceptions approved by a manager
  • Keeps work area clean at all times
  • Assists in the supervision and instruction of lower level cooks
  • Communicates with the chef to learn daily work tasks and coordination
  • May be required to work nights, weekends, and holidays
  • Shows mastery of all menu items and plate presentations
  • Assists the management team in control of food and labor costs
  • Practices safe work habits and responsible attitude toward safety of others
  • Adheres to uniform and grooming standards
  • Able to talk to guests about special menu allergies and special needs
  • Responsible for ensuring readiness for the next day
  • Responsible for utilization of all banquet items
  • Responsible for sanitation and organization of work area including walk-ins and freezers
  • Helps and assists in other kitchen areas when not busy
  • Performs other duties as assigned including working in other hotel areas to assist operations
  • Delivers passionate and engaging service to guests
  • Follows the GUEST service model: greet warmly, use eye and ear contact and guests’ names, establish and anticipate needs, solve and own requests and complaints, thank everyone
