The role of Banquet Cook at Sonesta International Hotels is essential to maintaining the high standards and quality of food service that the company prides itself on. This position involves preparing and cooking food with careful attention to cleanliness, sanitation, quality standards, taste, timeliness, and cost effectiveness. The Banquet Cook is especially responsible for all banquet hot food items, ensuring quality and consistency across all dishes served. This role requires someone who can efficiently manage food preparation stations, has knowledge of a wide range of cooking techniques, and can operate various kitchen equipment safely and competently.
The position is full-time, with anticipated pay ranging from $25.50 to $27.50 per hour, varying based on experience and skills. The work schedule may include nights, weekends, and holidays, reflecting the hospitality industry’s round-the-clock service requirements. Key duties include ensuring all supplies are stocked before service, maintaining cleanliness and sanitation of work areas including walk-ins and freezers, and assisting in supervising junior cooks. Additionally, the Banquet Cook plays a vital role in managing food and labor costs and ensuring that all banquet items are utilized properly.

Job Requirements
- High school diploma or equivalent
- Prior experience in culinary or banquet cooking preferred
- Knowledge of food safety regulations and sanitation practices
- Ability to perform various cooking techniques such as sautéing, braising, grilling
- Physical stamina to stand for long periods and lift heavy items
- Flexibility to work nights, weekends and holidays
- Ability to follow detailed instructions and work independently or as part of a team
- Strong communication skills
- Must adhere to uniform and grooming standards
Job Qualifications
- High school diploma or equivalent
- Previous experience in a banquet or hotel kitchen environment preferred
- Knowledge of all basic cooking techniques
- Ability to operate kitchen tools and equipment safely
- Competent in preparing large quantities of food
- Strong understanding of food safety and sanitation standards
- Ability to work collaboratively on a team
- Good communication skills to coordinate with chefs and kitchen staff
- Ability to work flexible hours including nights, weekends, and holidays
- Commitment to guest service and hospitality standards
Job Duties
- Controls quality and consistency of all food served
- Ensures that station or relevant prep list is set in a timely manner
- Demonstrates knowledge of all stations in the department
- Ensures all supplies necessary for service are available before service
- Demonstrates knowledge of all food items produced by an assigned station
- Handles and stores food properly and safely
- Produces all orders consistently, quickly, and in accordance with established quality standards
- Responsible for execution of all banquet functions when assigned
- Prepares and cooks breads and pastries as appropriate
- Reviews Production sheet to ensure that baked goods are produced
- Demonstrates safe and competent use of all tools including knives, pots, pans, stoves, ovens, grills, slicers, steamers
- Demonstrates knowledge of basic cooking techniques including sauté, braise, poach, grill, poele, fry, steam
- Respects scheduled hours of work and have all exceptions approved by a manager
- Keeps work area clean at all times
- Assists in the supervision and instruction of lower level cooks
- Communicates with the chef to learn daily work tasks and coordination
- May be required to work nights, weekends and holidays
- Shows mastery of all menu items and plate presentations
- Assists the management team in control of food and labor costs
- Practices safe work habits and responsible attitude toward safety of others
- Adheres to uniform and grooming standards
- Able to discuss special menu allergies and other needs with guests
- Responsible for ensuring readiness for the next day
- Responsible for sanitation and organization of work area including walk-ins and freezers
- Helps and assists in other kitchen areas when not busy
- Other duties as assigned including assistance in other hotel areas as needed
- Deliver passionate and engaging service to guests following the GUEST model of greeting, eye and ear contact, anticipating needs, owning complaints, and thanking guests
