This position requires close attention to operational details, including staff scheduling, monitoring attendance and punctuality, and documenting any deviations. Maintaining up-to-date recipe cards, production schedules, plating guides, and photographs is essential to preserve consistency and quality across all menu items. The role also includes a creative component, where the candidate will develop new menu options, test recipes, and write detailed instructions to enhance the dining experience. Collaboration with the Catering department will form a critical part of the role, assisting in the creation of special menus tailored for events and meeting clients as necessary.

Job Requirements
- High school diploma or equivalent
- Previous experience in a supervisory or management role in hospitality or culinary field
- Ability to communicate effectively both verbally and in writing
- Strong organizational and problem-solving skills
- Capacity to work flexible hours including weekends and holidays
- Ability to maintain confidentiality and professional conduct
- Willingness to meet with clients as necessary

- Proven experience in hospitality or culinary management

Job Duties
- Maintain knowledge of and ensure compliance with all departmental and hotel policies and procedures
- Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication, and recommend discipline or termination when appropriate
- Establish the day's priorities and assign production and preparation tasks for staff
- Review daily menu specials and give feedback to Sous Chefs
- Review banquet event orders and make note of any changes
- Communicate clearly both verbally and in writing with staff
- Ensure staff report to work as scheduled and document any late or absent employees
- Maintain current recipe cards, production schedules, plating guides, and photographs
- Ensure all staff prepare menu items according to recipes and yield guides following department standards
- Develop new menu items, test and write recipes
- Assist Catering with special menu development for functions and meet with clients as required
