The Banquet Captain role at Hotel Canandaigua in Canandaigua, NY is a key position within Midas Hospitality's team. This role is designed for an individual who is passionate about delivering exceptional guest service at a standard set by management while efficiently supervising banquet staff throughout all stages of event functions, from setup to breakdown. The Banquet Captain is responsible for coordinating all necessary arrangements before, during, and after each banquet event, ensuring flawless execution and guest satisfaction.
Day-to-day activities for the Banquet Captain include meticulously checking all room setups ahead of each event to guarantee that all arrangements meet the event’s specifications. The role requires close collaboration with the Banquet Chef to verify food quantities and timing for serving, ensuring smooth kitchen and service coordination. Additionally, the Banquet Captain inspects all event-related items such as china, glassware, silverware, and linens to maintain high service standards. Staffing requirements are reviewed and managed proactively to cover all events adequately.
Leading pre-function meetings is a critical part of the role, where the Banquet Captain ensures staff comply with policies on personal hygiene and appearance and assigns stations and partnerships among banquet staff to optimize efficiency. Continuous communication with meeting planners is necessary to confirm that every event detail and any last-minute changes or instructions are thoroughly understood and executed. The Banquet Captain monitors upcoming groups and major conventions up to 90 days in advance to prepare and align resources accordingly.
Throughout event functions, the Banquet Captain conducts quality checks by randomly selecting tables to evaluate food and service, confirming that food is served at proper temperatures and presentation standards are met. For receptions, the Captain ensures ample food availability and identifies opportunities for additional sales. Besides operational duties, this role may involve entering financial information in the absence of the Banquet Manager. The Banquet Captain also performs any other reasonable related duties assigned by superiors.

Job Duties
- Check all room set ups prior to each event

- Inform staff of specific needs for buffets and receptions
- Check staffing needs for upcoming events
- Check inventory needs for all upcoming events
- Conduct pre-function meetings to ensure personal hygiene and appearance standards of staff are met
- Allocate stations and partners for staff
- Review banquet event orders
- Communicate with the meeting planner handling the function to ensure all needs have been met and to check for any last minute instructions or changes
- Be aware of all upcoming groups and major conventions over upcoming 90 days
- Review assigned work functions for the entire day and the next week
- Read all assigned banquet menus and ask if specific items are unclear
- Complete all daily administrative tasks
- Select several tables at random during the function to evaluate food and service
- Ensure that food is served at the appropriate temperature, and that the entrée is placed properly on table
- For receptions, ensure sufficient food is available and any upsell opportunities are met
- Inputting of financial information in lieu of the Banquet Manager
- Perform any duty assigned by superiors within reason of job functions
