Herschend is seeking an experienced and meticulous Banquet Captain to lead banquet operations at its newest hospitality venture, Dolly Parton’s SongTeller Hotel, located in the heart of Downtown Nashville. Inspired by Dolly Parton’s legendary career and trailblazing spirit, SongTeller Hotel celebrates the local music and culinary scene, offering guests an immersive experience that marries entertainment, style, and hospitality designed the Dolly-way. The hotel features 245 rooms, two food and beverage entertainment venues, a market, and Dolly Parton’s Museum, creating a vibrant hub for guests to love every moment of their stay.

The Banquet Captain position is pivotal in ensuring the success and profitability of the hotel’s banquets and catering operations. This role involves overseeing daytime meetings, receptions, plated events, and other banquet functions while maintaining the highest standards of service that align with the brand’s unique experience. The ideal candidate will be responsible for leading banquet hosts, ensuring efficient banquet room setups, strict adherence to service steps, and coordinating with kitchen and event planning staff to guarantee seamless event execution.

Success in this role demands strong organizational skills, excellent communication with management and banquet hosts, and a leadership style that fosters growth and learning. The Banquet Captain plays a key role in maintaining the quality and accuracy of food and beverage service, managing production and supplies, and ensuring proper documentation and billing for group events. Job Requirements

  • Must be at least 18 years old
  • High school diploma or equivalent
  • One year of foods or banquet service experience
  • Supervisory experience preferred
  • Must be able to obtain Serve Safe certification within first 30 days
  • Tennessee Alcohol Board Commission (TABC) certification required
  • Basic computer skills
  • Must be able to pass a background check
  • Driver's license and acceptable driving record required if appointed authorized driver

Job Duties

  • Perform planning and organizing of functions for the banquet department including maintaining banquet logbook and event sheets
  • Check banquet rooms and back of house areas for cleanliness and proper setup
  • Communicate openly with management and hosts including training and scheduling
  • Monitor banquet functions to ensure service steps are followed
  • Supervise food and beverage services including setup, service, and breakdown
  • Coordinate details with banquet, conference planning, and kitchen staff
  • Conduct pre-shift meetings with banquet service hosts after each event
  • Ensure food pickup coordination and readiness 15 minutes prior to events
  • Inspect food products for quality and quantity
  • Compile and submit banquet event order checks for billing
  • Complete daily sales reconciliation and attendance records
