We are currently seeking a Specialist of Baking Technology and Commercialization to join our team. This role is integral to the support and development of baking technology across our Bimbo Bakeries USA facilities and co-pack operations, specifically in breads, buns, and breakfast products. The position involves leadership responsibilities in supporting operational safety programs and improving product quality, consistency, and safety through ingredient, formula, and process innovations. This specialist will work closely with marketing, research and development, and engineering teams to coordinate new product trials, scale-up commercializations, and cost-saving reformulations. The role demands strong analytical skills to troubleshoot production issues, provide statistical analysis, and guide continuous improvement efforts to enhance sustainability and productivity.

The ideal candidate will be well-versed in baking science and technology, applying hands-on knowledge to coach bakery associates and lead productive collaborations among various departments such as finance, procurement, and operations. The position offers a competitive salary range of $102,000 to $142,800, annual bonus eligibility, and a comprehensive benefits package including paid time off and 401k with company match. Job Requirements

  • Bachelor's degree in food science, food engineering, or related field
  • Five years of experience evaluating baking process technologies to troubleshoot and provide recommendations
  • Five years of experience in root cause and statistical analysis for continuous improvement
  • Five years of experience presenting data analysis reports to plant or engineering management
  • Ability to travel domestically approximately 80-90% of the time
  • Willingness to occasionally work weekends
  • Proficiency in MS Excel, MS Word, and PowerPoint
  • Strong communication and teamwork skills

Job Duties

  • Support assigned bakeries in ingredient, formula, process baking technology, and continuous improvement with focus on finished product quality, consistency, and safety
  • Troubleshoot bakery issues and ensure appropriate corrective actions are implemented
  • Support marketing, research and development, and engineering trials on new formulas, ingredients and equipment
  • Coordinate with operations teams to drive scale-up and commercialization of new products, cost savings projects, and product reformulations
  • Monitor quality post-launch and modify formula or process as necessary
  • Address product quality concerns, consumer complaints, waste reduction, and other initiatives using continuous improvement and statistical tools
  • Participate as key baking technical resource with engineering and operations on process and equipment modifications
  • Coach and train bakery associates on ingredient functionality, equipment, and baking processes using data logger technology
  • Complete and update product code books for all key launches
  • Conduct formula audits using internal database and follow up on corrective actions
  • Lead productivity initiatives by networking with finance, procurement, engineering, and operations
  • Document weekly trip results and summarize key follow-ups
  • Travel domestically approximately 80-90% with occasional weekend work
  • Perform other assignments as needed
