The role of Specialist of Baking Technology and Commercialization is a dynamic and integral position supporting Bimbo Bakeries USA and Co-Pack operations focused on breads, buns, and breakfast items. This role is essential in providing baking technical support by overseeing ingredient functionalities, formula accuracy, and process baking technologies. The Specialist leads initiatives to enhance product quality, consistency, and safety while addressing bakery operational challenges with data-driven solutions. Supporting the launch and commercialization of new products, the specialist collaborates closely with marketing, research and development (R&D), and engineering teams to develop trials, scale production, and ensure successful product rollouts. A significant portion of this role involves troubleshooting bakery issues, implementing corrective actions, and improving manufacturing processes using statistical analysis and continuous improvement methodologies. This position demands a high level of leadership and communication skills, with opportunities to coach bakery associates and interface with multiple departments including Finance, Procurement, and Operations. Additionally, the role involves substantial domestic travel, requiring the specialist to be flexible and proactive while maintaining an energetic and solution-oriented approach. Job Requirements
- Bachelor's degree in food science, food engineering, or related field
- Five years of experience in baking process technology evaluation and troubleshooting
- Experience in root cause and statistical analysis for continuous improvement
- Proven ability to present detailed data analysis reports
- Strong communication skills
- Proficient in Microsoft Excel, Word, and PowerPoint
- Ability to travel domestically 80-90% of the time
- Willingness to work occasional weekends
Job Qualifications
- Bachelor's degree in food science, food engineering, or related field

Job Duties
- Support assigned bakeries on ingredient, formula, and process baking technology related to product quality and safety
- Troubleshoot bakery issues and implement corrective actions
- Assist Marketing, R&D, and Engineering on development trials for new formulas, ingredients, and technologies
- Coordinate scale-up and commercialization of new products, cost savings projects, and reformulations with Operations teams
- Monitor quality post-launch and make formula or process adjustments as required
- Address product quality concerns, consumer complaints, and waste reduction initiatives using continuous improvement and statistical tools
- Coach and train key bakery associates on ingredient functionality, equipment, and baking processes
- Lead productivity initiatives by collaborating with Finance, Procurement, Engineering, and Operations
- Document weekly trip results and summarize follow-ups to the Operations team including the VP of Operations
- Participate as a key Baking Technical resource for process and equipment modifications
- Conduct formula audits and coordinate with R&D for necessary formula modifications
- Travel domestically up to 80-90% of the time, including occasional weekend work
- Perform other assignments as needed
