This role is for a Specialist in Baking Technology and Commercialization at Bimbo Bakeries USA. The position focuses on providing baking technical support and leadership across the company's bakery operations and co-pack partners, specifically for bread, buns, and breakfast products. The Specialist will support development efforts, lead product implementation functions, and ensure production aligns with quality, safety, and consistency standards. This position requires a comprehensive understanding of ingredient functionality, formula development, baking processes, and continuous improvement methods. The Specialist will work closely with multifunctional teams including Marketing, Research and Development, Engineering, and Operations to scale up and commercialize new products, drive productivity initiatives, and support sustainability goals.

Key responsibilities include troubleshooting production issues, supporting corrective action plans, coordinating trials of new ingredients and equipment, monitoring post-launch quality, and leading formula audits. The Specialist is expected to coach and train bakery personnel on technical aspects and use data analytics to improve processes and reduce waste. Additionally, the role demands strong communication skills to effectively relay project status, results, and recommendations to various stakeholders including plant management and executives.

The position includes frequent domestic travel of 80-90 percent, occasional weekend work, and requires a high degree of accountability and problem-solving skills based on root cause analysis and statistical evaluation. Job Qualifications

Job Duties

  • Support assigned bakeries in ingredient, formula, and baking process technology with focus on product quality, consistency, and safety
  • Troubleshoot bakery issues and implement corrective actions
  • Support Marketing, Research and Development, and Engineering on new formulas, ingredients, and equipment trials
  • Coordinate product scale-up and commercialization, ensuring test bakes and launches meet timelines
  • Monitor quality post-launch and adjust formulas or processes as needed
  • Address product quality concerns, consumer complaints, and waste reduction through continuous improvement and statistical tools
  • Coach bakery associates on ingredient functionality, equipment, and baking processes
  • Complete and update product code books for key launches
  • Conduct formula audits and work with R&D on modifications
  • Lead productivity initiatives with Finance, Procurement, Engineering, and Operations
  • Document weekly trip results and summarize key follow-ups to Operations team
  • Travel domestically approximately 80-90% of the time, including occasional weekend work
  • Perform other assignments as needed
