This role is for a Specialist of Baking Technology and Commercialization who will provide crucial baking technical support across Bimbo Bakeries USA and Co-Pack operations for breads, buns, and breakfast products. The position involves supporting the development and leading product implementation functions, focusing on finished product quality, consistency, and safety. This full-time role offers a competitive salary range between $102,000 - $142,800, including annual bonus eligibility, a comprehensive benefits package, paid time off, and a 401(k) plan with company match. The incumbent will provide leadership in safety programs and offer technical and statistical analysis to improve processes and sustainability within the bakery operations.

Key responsibilities include troubleshooting bakery issues, supporting marketing, R&D, and engineering trials on new products or technologies, and coordinating with operations teams to scale up and commercialize new products, cost savings projects, and reformulations. The role also entails monitoring quality post-launch, modifying formulas and processes as necessary, and addressing product quality concerns and consumer complaints through continuous improvement and statistical tools. The Specialist will be a key resource alongside engineering and operations teams for process and equipment modifications, coach bakery associates on ingredient functionality and baking processes, maintain product code books, conduct formula audits, lead productivity initiatives by collaborating with finance, procurement, engineering, and operations, and document trip results with key follow-ups.

This position requires around 80-90% domestic travel and occasional weekend work. The ideal candidate must have proficiency in MS Excel, Word, and PowerPoint, excellent communication skills, attention to detail, and a strong sense of urgency and professionalism in driving projects. Problem-solving should be rooted in statistical analysis and innovative thinking. The role also emphasizes leadership competencies such as using feedback for self-improvement, building partnerships, and working enthusiastically on new challenges while adapting to corporate culture.

Education requirements include a bachelor’s degree in food science, food engineering, or a related field, though a combination of education, training, and experience demonstrating competency may be acceptable. A minimum of five years of experience is required, specifically in evaluating baking process technologies to troubleshoot and recommend improvements, conducting root cause and statistical analysis for continuous improvement, and presenting data analysis reports to plant or engineering management. Job Duties

  • Support assigned bakeries in ingredient, formula, and baking technology with focus on product quality, consistency, and safety
  • Troubleshoot bakery issues and ensure corrective actions are implemented
  • Support marketing, R&D, and engineering trials on new formulas, ingredients, and equipment
  • Coordinate with operations teams to scale-up and commercialize new products and reformulations
  • Monitor post-launch quality and adjust formulas/processes as needed
  • Address product quality concerns, consumer complaints, and waste reduction using continuous improvement and statistical tools
  • Participate as a key technical resource in process and equipment modifications
  • Coach and train bakery associates on ingredient functionality and baking processes
  • Complete and update product code books
  • Conduct formula audits and follow with corrective actions
  • Lead productivity initiatives working with finance, procurement, engineering, and operations
  • Document trip results and summarize follow-ups to operations leadership
  • Travel domestically approximately 80-90% of the time with occasional weekend work
  • Undertake other assignments as needed
