The role of Specialist of Baking Technology and Commercialization at Bimbo Bakeries USA is vital in supporting both company-owned bakeries and co-pack operations in breads, buns, and breakfast products. This full-time position, offering a salary range of $102,000 to $142,800 along with an annual bonus eligibility and 401k with company match, involves providing technical baking support, driving product development and commercialization, as well as leading safety and quality initiatives. The specialist works closely with multidisciplinary teams including Marketing, Research and Development, Engineering, and Operations to support new product trials, scale-up processes, and cost-saving projects. The position demands strong expertise in baking technology, ingredient formulation, process troubleshooting, and quality control.

Key responsibilities include troubleshooting bakery production issues, ensuring timely corrective actions, and supporting product quality post-launch with formula and process modifications. The role also involves conducting formula audits, coaching bakery associates on ingredient functions and baking processes, and using data logger technology for baking process optimization. This specialist plays a crucial role in implementing operational improvements by networking with Finance, Procurement, and Engineering departments and documenting project outcomes for leadership. Given the nature of the job, approximately 80-90% domestic travel is expected, along with occasional weekend work. This dynamic role requires an individual who is detail-oriented, communicates effectively, drives projects with urgency, and leverages statistical analysis and root cause problem-solving.

Job Requirements

  • Bachelor's degree in food science, food engineering, or related field
  • minimum five years experience in baking process technologies evaluation
  • experience in root cause and statistical analysis for continuous improvement
  • proficiency in MS Excel, MS Word, and PowerPoint
  • strong verbal and written communication skills
  • ability to work cohesively with multidisciplinary teams
  • willingness to travel domestically 80-90% of the time

Job Duties

  • Support assigned bakeries with ingredient, formula, and process baking technology to ensure product quality, consistency, and safety
  • troubleshoot bakery issues and guide appropriate corrective actions
  • support Marketing, Research and Development, and Engineering in development trials of new formulas, ingredients, and equipment
  • coordinate with Operations teams for scale-up and commercialization of new products, cost savings, and reformulations
  • monitor quality post-launch and implement necessary formula or process adjustments
  • address product quality concerns, consumer complaints, and waste reduction through continuous improvement and statistical tools
  • participate as a baking technical resource for process and equipment modifications
  • coach and train bakery associates on ingredient functionality and baking processes
  • complete and maintain updated product code books
  • conduct formula audits and coordinate corrective actions with bakeries
  • lead productivity initiatives by collaborating with Finance, Procurement, Engineering, and Operations
  • document weekly trip results and communicate follow-ups to Operations leadership
  • undertake domestic travel and weekend work as needed
  • perform other assignments as required
