Job Description
Not a Bakery (NAB) began as a commissary kitchen supporting several renowned establishments, including Twelve, Evo Kitchen + Bar, The Good Table, and Douro. Over time, this kitchen evolved into its own distinct brand under the Prentice Hospitality Group umbrella, focusing on producing high-quality baked goods that balance classic craftsmanship with creative innovation. Located in Portland, Maine, NAB wholesales to select purveyors and operates a seasonal retail service from a food trailer, reaching a broad audience with fresh, artisan breads and pastries. NAB's ethos is rooted in culinary craftsmanship, emphasizing quality, consistency, and a collaborative work environment that nurtures growth and respect among team members. This dedication to excellence ensures that every product leaving NAB reflects the highest standards of baking.
The Baker role at Not a Bakery is a pivotal position within the production team focused on upholding NAB's reputation for exceptional baked goods. This hands-on position suits candidates who enjoy the fast-paced, detail-oriented environment of a professional bakery and who have a strong passion for the science and artistry behind bread and pastry making. Key responsibilities include preparing and baking a variety of breads and pastries, from mixing doughs and laminating pastries to overseeing proofing and baking processes. The Baker will follow precise recipes and production schedules daily to ensure product consistency and quality, contributing directly to maintaining NAB's high standards. Collaboration with the pastry and production teams is essential to meet production goals, maintain inventory, and contribute to menu development, highlighting opportunities for creativity and growth within the role. Essential skills include stamina, precision, attention to detail, and a thorough understanding of dough development, fermentation, and baking techniques. This full-time position requires early morning shifts and the ability to stand for prolonged periods. Joining NAB means becoming part of a team dedicated to culinary excellence, supported by the Prentice Hospitality Group's core values of expertise, nimbleness, ambition, inclusivity, and timeless quality. Candidates passionate about craft baking and eager to grow professionally in a supportive and innovative bakery environment will find this role rewarding and inspiring.
