The position of Laminated Dough Baker at Swamp Rabbit Cafe and Grocery is a vital role geared towards individuals who are passionate perfectionists about laminated dough and who appreciate butter as a key ingredient. This role is perfect for someone who wants to work in an environment that values authenticity and fun alongside professional baking. The Laminated Dough Baker will be responsible for producing a variety of baked goods, ensuring consistent quality by following proper recipes, weight standards, and baking procedures. The job includes mixing, scaling, portioning, rolling, proofing, and baking dough using industry-standard equipment. Additionally, the role requires preparing and chopping fruits and vegetables for various recipes, assembling baked goods for retail, catering, market, and wholesale orders.

As part of the Swamp Rabbit team, the baker will work early shifts between 4 am and 4 pm, including weekends, requiring flexibility and stamina in a kitchen environment that can get hot or cold. A key element of this role is a dedication to the mission of supporting local food systems and telling the story behind the ingredients. The ideal candidate will be detail-oriented, organized, and able to handle multiple priorities while maintaining a positive, enthusiastic attitude. Job Requirements

  • Must be 18 years of age or older
  • must be available on weekends and between the hours of 4am-4pm

Job Qualifications

  • Previous baking and/or mass production experience a plus

Job Duties

  • Produce Swamp baked goods including baking, mixing, scaling, portioning recipes and following proper weight standards
  • scoop, portion, and roll assorted baked goods for prolonged periods of time
  • follow daily checklists to prepare and bake a variety of unique recipes
  • mix, roll, proof, and sheet dough using industry standard equipment
  • follow proper time and temperature guidelines to ensure a quality bake each time
  • sort, assemble, and pack baked goods for store sales, caterings, market and wholesale orders
  • prep and chop fruits and vegetables for various recipes
