Job Description

The role offered is for a Baker to manage the bakery operations at one of Dexterra’s workforce accommodations facilities. This is an exciting opportunity for an experienced baking professional to take full responsibility for the end-to-end bakery production that serves hundreds, initially about 500 guests per day, with an ambitious plan to rapidly scale to over 4,000 guests daily. This position is pivotal in ensuring that baked goods are consistently high quality, food safety standards are strictly met, and there is a sufficient supply to meet meal service demands throughout the day.

As a Baker at Dexterra, you will be reporting to the Executive Chef or their delegate and will have a leadership role overseeing the bakery production and quality control. You will supervise the night-shift bakery staff, provide training and mentorship, and constantly seek ways to improve the bakery’s operational efficiency and product consistency. The role requires strong hands-on baking skills including creating breads, pastries, and desserts from scratch and utilizing par-baked ingredients. You will also develop bakery menus that align with service needs and client contracts, including special dietary requirements such as allergen-aware and modified recipes.

Food safety compliance is paramount in this role. You will ensure all work aligns with Food Safety Act requirements, FOODSAFE, and HACCP principles. Maintaining cleanliness and sanitation of the kitchen and equipment is a critical part of daily operations. Additionally, inventory management and product rotation to meet freshness standards are necessary to ensure the highest quality output.

This role demands a professional with a culinary background specializing in baking, food safety certification, and at least four years of baking experience in high-volume settings such as hotels, institutions, or camps. Experience in supervising bakery staff, particularly during night shifts, is highly valued, along with the physical capability to handle the demands of the job. Job Qualifications

Job Duties

  • Full responsibility for daily bakery and pastry production including bread desserts and baked goods prepared both par baked and from scratch ingredients
  • Supervising night shift employees providing mentorship guidance and on the job training
  • Preparing and baking goods from scratch in accordance with approved recipes and menus
  • Creating and following bakery and dessert menus to ensure quality consistency and production efficiency
  • Restocking pastry and bakery shelves to maintain a sufficient fresh and visually appealing supply of baked goods
  • Ensuring baked goods meet client quality standards and contractual requirements
  • Supporting special dietary needs including allergen aware and modified recipes as required
  • Identifying areas for operational improvement within the bakery and overall food service operation
  • Ensuring compliance with all Food Safety Act requirements FOODSAFE and HACCP principles
  • Maintaining cleanliness through regular cleaning washing and sanitizing of equipment and work areas
  • Monitoring product rotation labelling and storage to maintain freshness and food safety
  • Collaborating with culinary leadership to align bakery output with service volumes and guest demand
