The Back of House (BOH) team at Lost Forty Brewing plays a crucial role in delivering an exceptional dining experience to guests. The BOH team members are responsible for preparing and plating food items according to strict restaurant specifications. This includes setting up kitchen stations, following established recipes, and adhering to all food safety and sanitation procedures to maintain a clean and efficient kitchen environment. The BOH team supports multiple key roles such as Line Cook, Prep Cook, Expo, and Dishwasher, with assignments based on an individual’s experience, skills, and the needs of the restaurant.

Job Duties

  • Open, set up, and close station according to restaurant guidelines
  • prepare all food items as directed in a sanitary and timely manner
  • follow recipes, portion controls, and presentation specifications as set by the restaurant
  • restock all items as needed throughout shift
  • unload food truck deliveries and store according to specifications
  • assist with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, freezers, and all storage areas
  • perform additional reasonable requests or responsibilities by the manager on duty or owners at any time
  • adhere to uniform, grooming, and appearance standards consistently
  • greet all guests, employees, managers, and owners with an appropriate greeting
  • prepare and cook menu items according to recipes and quality standards (line cook)
  • maintain cleanliness and organization of the cooking stations (line cook)
  • work efficiently in a fast-paced environment to ensure timely service (line cook)
  • follow food safety and sanitation guidelines (line cook)
  • prepare ingredients including chopping vegetables, portioning proteins, and making sauces (prep cook)
  • assist in stocking and organizing kitchen supplies (prep cook)
  • ensure prep stations are clean and properly maintained (prep cook)

  • ensure accuracy and presentation of plated dishes before they leave the kitchen (expo)
  • communicate effectively between the kitchen and front-of-house team (expo)

  • operate dishwashing equipment to clean plates, cookware, and utensils (dishwasher)
  • keep the dish area clean and organized (dishwasher)
  • assist with trash removal and overall kitchen cleanliness (dishwasher)
  • support the BOH team by restocking clean kitchenware and equipment (dishwasher)
