The role of the Auro Pastry Chef is a vital part of maintaining the resort's culinary excellence. Reporting directly to the Auro Executive Chef, the Pastry Chef will be responsible for creating outstanding high-quality pastries and desserts that complement the restaurant’s tasting menu. This leadership role involves managing daily kitchen activities, overseeing staff, coordinating menu preparations, and ensuring the freshest ingredients and exceptional food quality are consistently maintained. Cost management, inventory control, and vendor coordination are also key responsibilities. The Pastry Chef must ensure exemplary standards of sanitation and food safety in compliance with local, state, and federal regulations.

This position offers a competitive salary range between $80,000 and $83,000 annually, commensurate with experience. Additionally, Four Seasons is providing a $1,000 signing bonus for external candidates, payable in two installments. The Auro Pastry Chef must demonstrate mastery of both classic and modern pastry techniques, strong business acumen, and the ability to thrive in a fast-paced, high-volume environment. They will lead and motivate their team, creating a positive and productive kitchen atmosphere while collaborating closely with other culinary and management departments.

A successful candidate will have at least two years of pastry leadership experience, preferably within a Michelin-level or fine dining setting, and may bring valuable experience from luxury hotel food and beverage service. This role requires a refined approach to ingredient selection, presentation, and innovation to elevate the guest dining experience at Auro.

The position is full-time and demands flexibility in scheduling to accommodate early morning, mid-day, and evening shifts, supporting the 24/7 operational needs of the resort. Job Requirements

  • College degree preferred specializing in hotel/restaurant management or culinary arts or equivalent experience
  • minimum 2 years experience in pastry leadership role in fine dining or Michelin-level kitchen

Job Duties

  • Manage all day-to-day operations of the pastry/bakery section of the kitchen
  • oversee prep, plating, and timely service of all pastry items during service
  • manage team members in the kitchen to attract, retain and motivate employees while providing a safe environment
  • hire, train, develop, empower, coach and counsel staff
  • conduct performance reviews
  • resolve problems
  • provide open communication and discipline as appropriate
  • lead the execution and development of all pastry and dessert components for the tasting menu
  • collaborate with Executive Chef on menu creation incorporating seasonal ingredients and trends
  • control labor and operating expenses through scheduling, ordering, budgeting, purchasing and inventory control
  • manage all procurement and ordering processes using Birchstreet
  • accurately manage labor and payroll systems including OnTrack, Workday, and ADP
  • organize and lead restaurant events including buyouts, catering and holiday activations
  • collaborate with other departments and clients regarding events
  • attend organizational meetings to outline culinary deliverables
  • communicate with restaurant managers to ensure guest expectations are met
  • ensure compliance with sanitation standards and maintain kitchen cleanliness and organization
  • maintain quality and portion consistency while monitoring food shipments
  • control food cost through creative menu planning and waste minimization
  • comply with company work rules and standards
  • work professionally and harmoniously with coworkers and supervisors
