The Assistant Executive Chef position at Resorts World Las Vegas plays a vital role in the successful operation of the resort's culinary team, specifically within the catering and banquet division. This full-time role is essential for supporting the Executive Chef in managing the daily back-of-house operations, ensuring that all culinary activities maintain the highest standards of quality, safety, and efficiency. The Assistant Executive Chef is entrusted with overseeing personnel management including hiring, training, and mentoring of chefs and line cooks, fostering a productive and motivated team environment.

In this capacity, the Assistant Executive Chef collaborates closely with the Executive Chef and General Manager to achieve or exceed financial goals related to labor costs and other operational cost centers. The role requires developing and maintaining menu standards, ensuring food presentation quality, and managing food and supply inventories along with purchasing and receiving activities for both front and back-of-house products. Maintaining sanitation and adhering to health code regulations is a critical part of the role, alongside conducting regulatory inspections and ensuring all certifications are current.

Beyond operational responsibilities, the Assistant Executive Chef serves as a role model and brand ambassador for Resorts World Las Vegas, upholding the company’s core values and standards in every aspect of their work. They lead communication efforts through regular meetings and training sessions to ensure clear and open dialogue within the team. The role also demands adaptability, as candidates need to work varied shifts including nights, weekends, and holidays.

Job Requirements

  • At least 21 years of age
  • high school diploma or equivalent
  • minimum six years experience as a chef in similar or related environment
  • minimum two years experience as assistant executive chef or chef de cuisine in catering and banquet operation
  • proof of eligibility to work in the United States
  • ability to obtain ServSafe certification
  • ability to work varied shifts including nights, weekends, and holidays

Job Qualifications

  • Advanced knowledge of catering and banquet operation principles and practices
  • ability to translate industry trends into successful menu selections
  • experience in meeting VIP guest requests and preparing custom menus on short notice
  • ability to draft reports, purchase orders, menus, and correspondence
  • experience with property management applications such as purchasing systems, Kronos, HotSOS
  • effective communication skills in English
  • polished appearance and demeanor
  • excellent customer service skills
  • knowledge and understanding of company and department policies, rules, and procedures
  • proven leadership and mentoring skills
  • ability to work varied shifts including nights, weekends, and holidays
  • degree in culinary arts or related field preferred
  • experience in catering and banquet operations preferred
  • experience in large luxury resort setting preferred

Job Duties

  • Collaborate with executive chef and general manager to achieve or exceed budgeted labor and cost centers
  • manage personnel for back of house staff including hiring, training, development, and corrective planning
  • achieve daily sales and assigned cost goals
