The Assistant Food & Beverage Director role at Hilton Grand Vacations is a pivotal position that involves assisting in leading all aspects of the daily operations of the Food & Beverage department. The successful candidate will play a key role in training, directing, and supervising the performance of team members to ensure exceptional service and operational excellence. This leadership role requires collaboration across departments, particularly with the Front Desk team, to coordinate inventory forecasting based on occupancy levels. The Assistant Food & Beverage Director will contribute to menu development by helping to create new menu items and recipes, ensuring that offerings meet guests' expectations and maintain high-quality standards. Financial management is a significant part of this role, as the individual will help maintain inventory levels, control expenditures, and assist in preparing budgets while monitoring costs to ensure they align with department goals.

Operations improvement is continually emphasized in this role, with responsibilities that include monitoring procedures, setting departmental goals, coordinating scheduling, and overseeing employee training and development. Compliance with health and safety standards is mandatory, including maintaining the department's Health Department "A" rating and adhering to state food, liquor, and sanitation laws. The Assistant Food & Beverage Director also manages communication with external contacts such as purveyors and health officials, ensuring that all operational aspects meet or exceed regulatory requirements. Job Requirements

  • High school diploma or equivalent
  • 1+ years of related experience
  • 1+ years supervisory experience, hotel or resort preferred
  • computer proficiency with Microsoft Word, Excel, and Outlook
  • proficient in English language with verbal and written communication skills
  • valid Hawaii Health Card/Food Handler's Card
  • valid Hawaii Alcohol Awareness Training Certification
  • familiar with Liquor Commission and Blue Card requirements
  • must be of legal age to serve and sell alcohol

Job Qualifications

  • BA/BS or bachelor's degree is advantageous
  • previous menu creation experience is beneficial
  • 3+ years of related culinary experience is advantageous
  • back of house and/or front of house restaurant management experience is a plus
  • union experience is favorable

Job Duties

  • Assist in developing menu items and recipes to be sold in the food and beverage outlets
  • Maintain inventory levels and controls and assist in the preparation of department budgets and monitor expenditures to assure cost of goods sold and operating expenses are managed according to budget
  • Monitor procedures to improve operations
  • Establish work priorities, departmental goals, and coordinate departmental scheduling, training, and development
  • Coordinate with Front Desk to forecast inventory needs based on occupancy and consistently report to management on priorities and activities of department
  • Direct communication with departments and outside entities, and act as a business contact with colleagues, purveyors, and the Health Department officials
  • Ensure compliance with state food, liquor (where applicable), and sanitation laws and regulations and maintain an "A" rating with the Health Department
