The Assistant Bakery Operations Manager (ABOM) role at Insomnia Cookies is a critical leadership pipeline position designed to groom future Bakery Operations Managers. This full-time role demands a blend of hands-on operational expertise with team and talent development abilities, administrative ownership, and leadership skills. ABOMs operate nearly at the level of a Bakery Operations Manager (BOM), maintaining high standards for bakery operations including inventory rotation, scheduling, staffing, order support, and adherence to food safety and customer experience protocols. The role requires operational urgency, accuracy, and accountability while nurturing leadership capabilities to independently manage a bakery.

ABOMs support recruiting, onboarding, training, and coaching of hourly team members, driving a culture of accountability, consistency, and growth mindset. They are responsible for maintaining workforce standards, delivering real-time feedback, and ensuring compliance with company training programs. In scenarios where the BOM is absent, ABOMs take full ownership of bakery operations, modeling operational discipline and urgency while partnering with area leadership to address operational gaps. Additionally, ABOMs maintain continuity during leadership transitions or staffing shortages, ensuring seamless daily operations.

Key responsibilities include executing core bakery operations such as inventory management, labor scheduling, and operational checklists, while upholding strict product quality, cleanliness, and food safety standards. ABOMs are vital in controlling inventory shrink and supporting ordering processes. This position demands the ability to perform all bakery roles during peak periods and adapt quickly within a fast-paced, high-volume retail environment.

Job Requirements

  • Minimum 1 year leadership experience in restaurant, retail, or hospitality operations

Job Duties

  • Execute all core bakery operations including inventory rotation, scheduling support, staffing coordination, and administrative checklists
  • Maintain strict adherence to product quality, cleanliness, food safety, and guest experience standards
  • Support ordering, inventory accuracy, and shrink control
  • Assist in schedule creation and labor execution to meet operational targets
  • Support recruiting, interviewing, onboarding, and training of new staff
  • Deliver consistent coaching and real-time performance feedback
  • Hold team members accountable to standards while reinforcing a growth mindset culture
  • Ensure onboarding and training programs are executed to company standards
  • Manage bakery operations independently in the absence of the BOM
  • Model urgency, accountability, and operational discipline
  • Partner with BOM and Area leadership to identify operational gaps and implement solutions
  • Maintain continuity of operations during leadership transitions or staffing shortages
  • Other duties as assigned
